Responsibilities:

  • Report to and work under the GSR Culinary Team and work with Chef Charlie Palmer to maintain kitchen organization and creative menu development
  • Meet and exceed monthly and annual culinary benchmarks established by GSR Culinary Team
  • Meet and exceed Charlie Palmer Collective culinary standards
  • Develop seasonal menus and specials, and support annual Charlie Palmer events
  • Ensure food quality and freshness, and monitor ordering and stocking
  • Specialize in plating, presentation, and detailing of all dishes
  • Champion the BOH operation and provide guidance to the kitchen employees, including, but not limited, to food preparation, line cooking, and dish finishing and plating
  • Coordinate nightly with BOH and FOH employees to manage ticket times with efficiency and consistency
  • Develop and grow all kitchen employees
  • Train new kitchen employees to restaurant and kitchen standards
  • Utilize GSR property wide systems to manage food and product ordering, labor allocations, and budgetary milestones
  • Ensure the kitchen and production areas are clean and maintained at highest safety standards and compliant
  • Manage food storage units all meet standards and are consistently well-managed

Preferred Qualifications:

  • Minimum 5 years’ experience in a qualified kitchen
  • A passion for hospitality, food and beverage, and the guest experience
  • Ability to read and follow recipes and standards
  • Strong organizational & creative problem-solving skills
  • The ability to comfortably lead a team in a busy atmosphere
  • Creative & team oriented
  • Must have excellent computer skills, food cost management, catering experience
  • Fine Dining experience a plus
