What are the responsibilities and job description for the Chef de Cuisine position at Cielo Rojo?

Cielo Rojo is expanding to a larger location down the street in a beautiful setting in the heart of Takoma Park, MD. In this growth, we will need an excellent Chef de Cuisine to join our growing team! Our slogan Maíz, Espíritu, Amor embodies what we hope to bring to the table. HIRING DATE: We are looking to hire for this role at the end of November FYI as this role is for our expansion to a larger space down the street and construction is still not finished.

About the Role:

- Assist directly with hiring and training decisions for BOH team (final decisions on hiring made by Owner)

- Works closely with Owners & GM to ensure restaurant operations run smoothly, most closely works with Executive Chef/Owner

- Reports to Executive Chef

- Oversees food quality and consistency at the highest standards of care, consistently giving feedback to cooks to better their performance

- Ensures food quality is on par with Owner expectations

- Oversees plating of dishes to ensure they are done the same each time

- Tastes and oversees sauces, meats, dishes, to ensure they are made correctly on a daily basis

- Weekly inventory/ordering of BOH supplies or overseeing of ordering to ensure low food waste and kitchen staff is following proper procedures

- Makes weekly BOH schedule w/Lead Sous Chef

- Help create a welcoming community environment for kitchen staff

- Guide kitchen staff to ensure kitchen timing is on par with restaurant standards

- Oversees timing of kitchen

- Works the line/supports kitchen staff during busy periods and is not sitting around/team player/on hands manager

- Oversee and ensure that all company systems and policies are maintained

- Make sure all new employees go through the proper training and have all the necessary tools to succeed in their position

- Updates FOH Leads & Management team on item availability

- Helps to maintain minimal food waste by ensuring the right amount of food is heated or made per season/day/week

- Assists in creating specials in line with traditional Mexican cuisine or contemporary Mexican cuisine and trends, presents to Executive Chef

- Runs the kitchen line at night to ensure food timeliness and quality controls

- Nightly reports to management team about kitchen needs, shift reporting and what needs to be addressed in order to do better the next day

- You are patient and quick on your feet to adjust to a new restaurant opening where changes are frequent and quick

- You are willing to go above and beyond to ensure the quality and consistency of food is on par with Ownership standards

- You are highly confident in your abilities and are detail-oriented

- Defined palatte that can distinguish what is needed to balance salsas and complex Mexican flavors

- You have a passion for Mexican cuisine

- You are a team player and have excellent communication skills

- You are hands on and always lending a hand to staff

- You work well with straight shooters and like honest conversations

-You care about creating a warm and loving work environment while at the same time have high standards of excellence

-At least 2 years Chef de Cuisine or Kitchen Management experience

PLUS: Has experience working in Mexican cuisine

-Must be Bilingual in Spanish and English: conversational Spanish and must be able to write/read in English

Pay: $75,000.00 - $85,000.00 per year
