POSTION: YOTTO SUSHI CHEF
POSITION PURPOSE:
To serve fresh and clean sushi food in a comfortable environment. Sushi chefs should work to create exciting visual presentations for their food.
ESSENTIAL FUNCTIONS AND BASIC DUTIES:
- The sushi chef must inventory and evaluate all of the fish for the day and all peripheral sushi making ingredients.
- Ensure that they make and serve on a clean and neat environment. They should keep the station and free of clutter.
- To keep the cutting board and knives clean after each piece of fish is cut or roll is made.
- Should work to create exciting visual presentation for their food.
- To prepare rolls or sashimi with a variety of colours and textures.
- Correctly closing the Sushi station for the night after the shift
- Responsibility to clean and sharpen their Sushi Knives, so to extend the life of the knives and make slicing faster, easier and more accurate.
- To ensure that each dish leaving the kitchen is checked for quality, quantity, presentation and correct temperature.
- To ensure that regular on-the-job training is carried so that subordinate staff perform their duties effectively and efficiently
OTHER:
- Regular attendance in conformance with the standards, which may be established from time to time, is essential to the successful performance of this position. Employees with irregular attendance will be subject to disciplinary action, up to and including termination of employment.
- Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs of the organization. In addition, attendance at all scheduled training sessions and meetings is required.
- Upon employment, all employees are required to fully comply with Cipriani rules and regulations for the safe and effective operation of the facilities. Employees who violate rules and regulations will be subject to disciplinary action, up to and including termination of employment.
SUPPORTIVE FUNCTIONS:
In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions:
- Complete/delegate culinary tasks assigned by the Executive Sous Chef
- Assist with labor and budget monitoring
- Assist with weekly schedule according to established guidelines and occupancy
- Maintain organization, cleanliness and sanitation of work areas and equipment.

PHYSICAL ACTIVITIES AND REQUIREMENTS OF THIS POSITION:
- Most work tasks are performed indoors. Temperature is moderate and controlled by facility environmental systems.
- Must be able to exert well-paced ability in limited space and to reach other locations of the property on a timely basis.
- Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity.
- Talking and hearing occur continuously in the process of communicating with guests, supervisors, and other employees.
QUALIFICATION STANDARDS:
Education: Culinary Degree or equivalent
Experience Required: Five years related experience in Japanese Cuisine and Sushi/Sashimi.
Licenses or Certificates: Ability to obtain and/or maintain any government required licenses, certificates, or permits.
Grooming: All employees must maintain a neat, clean and well-groomed appearance per Cipriani standards.
