The Beverage Supervisor is responsible for the overall operation and profitability of assigned venue(s). The Senior Beverage Manager ensures the development and maintenance of well performing teams, achieving financial and enterprise objectives, maintaining proper inventory control including equipment and supplies, maintaining consistent, high quality customer service, and ensures compliance with all health and safety regulations. Responsibilities also include interviewing, scheduling, and staffing plans; preparing sales, inventory, and personnel reports; providing dedicated leadership to the outlet(s) and maximizing team member morale through leading by example. Performs additional job duties as assigned by Sr. Director of Hospitality.

SPECIFIC DUTIES AND RESPONSIBILITIES
- Supervises operation of bars to maximize profitability, minimize legal liability, and conform to alcoholic beverage regulations.
- Adheres to Department policies and procedures and ensures team members are trained in all requirements.
- Continuously evaluates operations to determine if efficiencies would be beneficial.
- Makes recommendations for policy/procedure modifications when required in advance of implementing changes.
- Monitors changes in law or regulations to stay in compliance with alcohol service. Assists in development of security infrastructures and policies in accordance with existing organizational policies and procedures to support the newly established security functions.
- Acts as a thought leader and innovator by identifying, developing, and continuously improving security and training practices.
- Manages assigned headcount to ensure expenses remain within budget, overtime is minimal, all team members are properly trained to perform their duties, adequate staff is hired, trained and reports to work for all shifts, all required ServSafe, Food Handlers are maintained by assigned staff and all HACCP procedures and Health and Safety regulations are adhered to.
- Creates guidelines to sustain highly energized culture and engaged and enthusiastic work environment that ensures optimal restaurant and entertainment experience. Maintains complete knowledge of all liquor brands, beers, and non-alcoholic selections available in outlets, the characteristics and description of every wine/champagne by the glass and major wines on the wine list, designated glassware and garnishes for drinks, all bar menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation, and prices. Implements training programs that ensure high quality service including training in service, and food and beverage products that are offered. Acts as role model to other team members and always presents his or herself to be seen as a credit to the resort and encourages others to do the same.
- Manages budgeted revenue, beverage cost, expense, headcount, and profit for assigned venue. Provides explanation of any unfavorable variance monthly and prepares and implements action plan to track favorably to budget by end of fiscal year. Prepares budget forecasts as necessary. Responsible and accountable for Profit and Loss (P&L) statements. Performs research and analysis of sales, trends, and expenses to prepare budgets and establish business plans. Maintains projected relationship between revenue and other items (expense, headcount, salaries, food cost, etc.) to maintain margin percentage if actual revenue tracks below budget. Maintains, coordinates, and maximizes labor based on nightly changes in sales/business volume. Collaborates with venue chef to ensure food cost remains within budget, menu items remain attractive to customers as measured by customer satisfaction and revenue generated, and presentation meets Food & Beverage standards.
- Closely monitors customer satisfaction and addresses and resolves customer complaints promptly.
- Directs internal and external investigations in conjunction with Human Resources to gather, analyze and document information regarding incidents and losses, identify responsible parties, and identify gaps or failures in internal control processes.
- Performs other duties as assigned to support the efficient operation of the department.

REGULATORY AND COMPLIANCE RESPONSIBILITIES:
In addition to the other duties described herein, each Team Member has the following responsibilities related to compliance with laws and regulations.
- Attend required training sessions offered by the Company.
- Obtain and retain required license(s).
- Perform the duties described in compliance with local laws and regulations.
- Take the necessary steps to ensure minors are not allowed to gamble or loiter in gambling areas, drink alcoholic beverages, or purchase tobacco.
- Have knowledge of the ordinances, regulations, laws, policies, and procedures relating to the Team Member’s department.
- Have knowledge of the Property’s programs to address problem gaming.
- Report any acts of wrongdoing of which the Team Member may have knowledge.
EDUCATION, TRAINING, AND EXPERIENCE:
- Bachelor’s degree in restaurant management or related field preferred.
- Minimum five (5) years beverage service supervisory/management in a high-volume entertainment bar restaurant with high quality food, extensive beer and spirits offering, with a high energy atmosphere with live entertainment.
- Minimum of four (4) years’ progressive supervisory and managerial experience in a beverage environment, directing, leading and coaching others to exceed organizational standards; must have experience in a high-volume, multi-venue or casino facility.
- Equivalent combination of education and progressive, relevant, and direct experience may be considered in lieu of minimum educational/experience requirements indicated above.
- Must possess advanced knowledge of liquor/beer/wine product and mixology.
- Must possess knowledge of current OSHA and Alcoholic Beverage Control (ABC) regulations.
- Intermediate proficiency in Microsoft (Word, Excel, Power Point and Outlook) is required.
- Must be at least eighteen (21) years of age.
- Must be able to stand for longer than 8 hours.
- The ability to lift, push and pull up to 20 pounds.
Certificates, Licenses, and Registrations: Virginia Racing Commission License
Valid Driver’s License with a minimum of three (3) years driving experience.
