SUMMARY:
Position involves the planning, purchasing, preparation and delivery of nutritious, high quality food to residents within the limits of the approved budget, in accordance with the recommended Dietary allowances of the "Food and Nutrition Board" of the "National Academy of Sciences," and in compliance with state/federal regulations and internal policies.
Coordinate Dietary activities by performing the following duties personally or through subordinate supervisors.
Maintain Rights of Residents as set forth by the Texas Department of Health Laws and Regulations.
ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned with or without reasonable accommodations.
- Evaluates and monitors all aspects of Dietary operation, making recommendations for conformance level that will provide nutritionally adequate, quality food.
- Assesses, develops, implements, and evaluates menu patterns under the supervision of the consultant dietician.
- Maintains high quality food for regular and modified diets.
- Purchases and receives food and non-food supplies are stored in accordance with Department of Health regulations.
- Ensures that food and non-food supplies are stored in accordance with Department of Health regulations.
- Maintains high standard of sanitation and cleanliness in the Dietary Department.
- Reviews financial transactions and monitors budget to ensure efficient operation, and to ensure expenditures stay within budget limitations.
- Interviews and hires Dietary employees in accordance with policies and procedures.
- Plans, organizes, and conducts orientation, training, and in-service educational programs for Dietary personnel.
- Prepares timely disciplinary action and counsels Dietary employees, in accordance with policies and procedures.
- Consults with health care team concerning nutritional care of residents.
- Investigates and resolves food quality and service complaints.
- Confers with other directors, residents, and/or sponsors to accommodate special activities and requests.
- Prepare routine reports and maintains all Dietary records in accordance with policies and procedures.
- Knowledgeable of and implements all safety, universal precautions, and Company policies/procedures for the protection of residents, co-workers, and self.
PHYSICAL, COGNITIVE, AND SENSORY REQUIREMENTS:

- Ability to remain calm under stress.
- Must function independently, have flexibility, personal integrity, and the ability to work effectively with residents, personnel and support agencies.
- Ability to demonstrate patience, tact, courtesy, enthusiasm, and a positive attitude.
- Must be able to relate to and work with the ill, disabled, elderly, emotionally upset, and at times hostile residents within the facility.
- Ability to read and write in English.
- Must be able to lift and transfer a minimum of 25 pounds.
EDUCATION/EXPERIECE
- High school diploma or general education degree (GED); or one to three months' related experience and/or training; or equivalent combination of education and experience.
- Credentialed in Dietary Management.
