Our client Liberty Senior Living is seeking a Dietary Manager in Wilmington, NC.

This position is an employee of Liberty Senior Living.

CCL Hospitality Group is only providing support to assist our client in identifying an exceptional candidate for this role due to our expertise in the field and close working relationship.

The Dietary Manager oversees the daily supervision of the dining services department within Liberty's Health Services dining environments including the direct supervision of the personnel in food preparation, food distribution, and kitchen sanitation. The DM will organize catering events and assist with menu development within Liberty's Senior Living's culinary department.

JOB PURPOSE

The Dietary Supervisor reports to the Administrators. He/She works and communicates closely with residents, department heads and staff. He/She may occasionally leave campus for supplies, educational opportunities and training.

EDUCATION AND EXPERIENCE

The DM requires a Certified Dietary Manager (CDM) certificate or degree in related field based on state specific requirements for community licensure. Has a minimum of one year of experience supervising within a kitchen/culinary food service operation, preferably in a healthcare, or equivalent combination of training, education and experience. Completion of a state approved food service safety course is required.

ESSENTIAL DUTIES AND RESPONSIBILITIES

The DM interviews, trains, orientates, evaluates, recognizes and disciplines staff as needed. This includes providing day to day work direction and problem solving as issues or conflicts arise. Continually communicates expectations with staff. Ensures staff complies with online education training. Follow organizational Human Resource policies. Develop and maintain staffing and scheduling systems reflecting quality, cost, and appropriateness, based on workload, skills, availability of support services, infection control issues, and safety considerations. Provides regular staff meetings and ongoing employee educational and development opportunities which meet regulatory requirements and increase knowledge. Creates and maintains a work environment for employees that is conducive to high productivity and morale. Establish and maintain effective communication systems with employees.

The DM will recognize the importance of customer service, and strive each day to provide an exceptional experience for each person they serve. He/She will know that all residents, patients, clients, families, volunteers and coworkers are all customers, and will work to ensure that every interaction they have with them is positive.

Coordination of Events/Catering

The DM will be responsible for organizing and set up of day to day events and special functions held at Liberty's Health Services dining departments. He/She will work closely with staff and family to ensure all catering needs are met. He/She will assist the organizer with menu planning. He/She will check food inventory, order food, organize and prepare food and present food in a professional manner.

Menu Development

The DM will assist in planning and creating menu cycles. He/She will be responsible for bringing forth innovative ideas and trends to enhance the dining experience for residents and guests. Menu planning will include researching food cost, portion controls, food appearance, and taking into consideration resident/guest requests.

The DM ensures all meals are prepared, served, and stored as planned and consistent with the current federal, state and local standards governing nursing home/long term care and assisted living facilities. The DM ensures meals are prepared and served in accordance with menu and established portion control procedures. He/She serves as a liaison between consultant dietitians and Nursing to ensure resident's nutritional needs are met. Oversee that all trays are delivered timely, properly and accurately. The DM follows and abides by the HIPAA (Health Insurance Portability and Accountability Act) privacy guidelines as administered by Liberty Senior Living.

Inventory Control

The DM maintains and monitors inventory levels as established by departmental census/budgets. He/She will order food and supplies as needed. He/She tracks invoices from vendors, checks orders for accuracy, and supervises proper storage of food and non-food items. He/She will ensure stored items will have identifying labels and are dated based upon "first-in-first out" or FIFO.

Infection Control

The DM ensures proper temperatures and storage of raw and leftover foods; inspects and maintains the cleanliness of the refrigerated areas, storage rooms, utility rooms and other areas of the dining services department. He/She ensures that dining staff personnel maintain habits of good personal hygiene and infection control procedures. In addition, he/she ensures that dining staff understands and follow Standard Precautions, established safety rules, fire and disaster policies and procedures, and cleanliness of all work areas in the kitchen.

Other Duties as Assigned

The DM looks for and reports any equipment that is in need of repair to Maintenance and/or the Culinary and Nutrition Services Director. He/She reviews, documents, and promptly resolves all resident complaints concerning the dining services department. In the event of a fire or other emergency, he/she assists with resident evacuation. He/She attends in-service training and other work related meetings as required or approved. He/She carries out special projects as identified by the Culinary and Nutrition Services Director. He/She helps with any other areas of the building as needed.

Continuous Improvement

The DM actively participates and implements quality performance in all aspects of job responsibilities and functions. This includes all interactions with residents, staff and visitors. He/She participates in and promotes teamwork. The CDM seeks, recommends, and/or implements new methods and means of providing quality service and continuous improvement. He/She participates in continuing educational opportunities as appropriate.

QUALIFICATIONS

Patience, tact, enthusiasm and a positive attitude towards the elderly is essential. The ability to work with a variety of staff and residents with differing values, attitudes, capabilities, and dispositions is essential. Should possess good intervention techniques, excellent communication skills with groups and individuals, problem solving and decision making capabilities, and the ability to solicit cooperation. The CDM must have knowledge of state and federal requirements regarding health inspections.

PHYSICAL QUALIFICATIONS

1. Vision - Must be able to read normal print, to note patient condition, color changes.

2. Hearing - Must be able to hear normal tones, intercom, and fire alarm.

3. Speech - Must be able to speak English, communicate with patients, families, and other staff.

4. Other - a. Must be able to lift up to 100 pounds.

b. Must be able to sit, stand, and walk, stoop, squat, bend and reach.

c. Must use good body mechanics.

d. Must be able to write.

5. Required to stand and walk continuously. Work is of heavy demand with lifting up to 100 pounds maximum with frequent lifting and/or carrying of objects up to 25-50 pounds. Activities required include frequent stooping, bending, pushing, pulling and reaching and occasional kneeling, crawling and squatting.
