Job Summary:
The Pastry Chef de Cuisine will provide hands-on leadership for their kitchen while maintaining a focus on delivering seamless Guest experiences. They will provide leadership, inspiration, development, support and motivation to their team, creating a positive environment that encourages ownership, efficiency and accountability. This role has an emphasis on food safety and safeguards excellent quality and top performance. They will attract and retain diverse talent while meeting or exceeding business results.
Responsibilities:
- Develop and create innovative and high-quality dessert menus in alignment with the restaurant’s style and concept
- Design and execute a wide range of pastries, bread, cakes, and desserts for various dining areas and special events
- Lead all aspects of the production process, ensuring consistency, freshness, and presentation of all pastry items
- Train, mentor, and empower staff, maintaining high standards of performance and fostering a positive work environment
- Manage inventory, ordering, and stock rotation to maintain ingredient freshness and minimize waste
- Ensure compliance with health and safety regulations and uphold sanitation standards within the pastry kitchen
- Provide strategic direction and hold direct reports accountable for job performance and assigned training through regular check-ins and utilization of development plans
- Foster an environment where Cast feel included, trusted, empowered, and recognized
- Build effective relationships among Cast, leaders, peers, and direct reports
- Support and drive location menu development
- Support company-wide synergy efforts through menu and product development
- Educate Cast on seasonal products, culinary styles and techniques, industry trends, and special dietary needs
- Drive the 5 Keys while modeling professionalism, positivity, and compassion
- Champion change with creative thinking and vision to drive business results
- Ensure operational compliance of Global WDW Standards, WDW Food & Beverage Standards, and WDW Food Safety Standards
- Monitor monthly inventory, par levels, spoilage, and support environmental efforts
- Ensure proper maintenance and cleanliness of equipment and facilities
- Utilize Workday to document performance and development opportunities and stay current on assigned tasks
- As required, complete Company-mandated compliance training by initial due date via DLearn
Required Qualifications
- Proven experience in a leadership Pastry Chef Role (minimum 5 years) or in a similar role within a high-volume multiunit location but not limited to overseeing multiple resorts and fine dining establishments
- Culinary degree or relevant certification from a culinary institute is preferred
- Exceptional creativity and proficiency in creating a wide range of pastries, desserts, baked goods, wedding cakes and amenities
- Strong leadership, organizational, and communication skills
- Ability to work and develop effectively in a fast-paced environment while maintaining attention to detail
- Knowledge of industry best practices, food safety standards, and sanitation regulations
- Flexibility in scheduling, including evenings, weekends, and holidays as needed.
- Proficient with various technology programs including Microsoft Office, Ariel/NALA, Menu Modification Forms, SAP, and others
- Ability to work with and develop a diverse team
- A strong knowledge of overall kitchen equipment, maintenance, and functionality
- A working knowledge of the F&B capital process and utilization of the equipment standards list
- Experience leading in a unionized environment
- Food Safety Certification

Salary : $50,400 - $63,800
