Summary:
The Distiller executes all activities relating to the distillation/blending/bottling of spirits by supporting and directing the full spectrum of the distillation and production process.
What You Will Do:
- Supports distillation and plant operations staff in delivering the highest quality spirits to the consumer across all brands.
- Manages processing trials inclusive of safely operating our lab distillation column and details the results of the experiments in reports.
- Tastes spirits, conducts evaluations, makes recommendations, and develops a plan for the execution of recommendations around treatments or blending changes to improve spirits quality.
- Requests samples, reviews analysis and acts on trends, tastes incoming bulk inventory/ingredients, and conducts tastings with distillation team.
- Drives and oversees the processes and operations involved to deliver spirits from raw material to bottle as assigned (e.g. management of fermentation, distillation, barrel aging, product blending and product bottling).
- Aligns on harvest process plan, writes templates and op requests that provide clear directions to plant operations for grape receiving and wine production for brandy distillation during harvest and off-season. Requires personnel to be on site at the wineries multiple times throughout the year (24/7 when distilling GBD).
- Gives real -time feedback to operations teams during distillation processes including providing direction on how to operate the stills more efficiently and to produce product on style target.
- Conducts vineyard visits for premium portfolio and may make picking decisions where there is a clear style target guideline.
- Works closely with distillation and cellar personnel to write work orders and plan cellar operations both in Gallo facilities and at our co-manufacturing facilities to enable timely bottling of our products.
- Ensures all spirits blends comply with formulas and TTB regulations and completes tracking paperwork within a timely manner from raw materials to bottle.
- Manages blend groups within the value portfolio, while ensuring blend and style continuity. Notifies team and operations if there are risks blending timeline. Troubleshoots blend issues and can resolve non-compliant blends.
- Writes planning models that enables more efficient operations and management of our products and processes.
- Manages continuous improvement of production processes and procedures by leading small scope projects with cross-functional partners.
- Collaborates with cross-functional teams in the pursuit of creating better products, processes and procedures both within Gallo facilities and with co-manufacturers.
- Functions as the lead person with a co-manufacturer as required and manages daily aspects of existing Co-Man processes, such as troubleshooting production issues, traveling to Co-Man sites for new production and building strong business relationships with sites and internal Co-Man team.
- Reviews wine/spirits analysis data and makes necessary quality adjustments.
- Manages spirits quality at a fundamental level.
- Develops a high-level plan of spirits shipping and ensures a plan is in place to support barreling over twelve month period.
- Collaborates on creation of premium barreling plan and runs execution of the plan.
- Assists in training of entry level distillers in areas of production and some distillation.

What You Will Need:
- High school diploma or State-issued equivalency certificate.
- Bachelor's degree of science or engineering plus 5 years of distillation, enology, winemaking, or chemistry experience reflecting increasing levels of responsibility; OR Bachelor's degree and a General Certificate in Distillation plus 7 years of distillation, enology, winemaking, or chemistry experience reflecting increasing levels of responsibility; OR 9 years of distillation, enology, winemaking, or chemistry experience reflecting increasing levels of responsibility.
- Required to be available for 24 hour on-call management of distillery operations.
- Required to be 21 years of age or older.
- Required be on site and work extended hours at the wineries throughout harvest.
- Required to identify variances in spirit color by sight and identify spirit flavors by taste and smell.
- Required to occasionally lift and move full cases of product weighing up to 50 pounds.
- Required to occasionally work under varying climatic conditions.
- Candidates for this position must have a valid driver's license and a safe driving record. Required to obtain a California driver's license or appropriate state driver's license within 30 days of hire.
- Skilled in the use of MS Word and MS Excel at an intermediate level.
- Experience solving practical problems and dealing with a variety of concrete variables in situations where only limited standardization exists.
- Experience defining problems, collecting data, establishing facts and drawing valid conclusions.
- Required to travel to company offices, sites, and/or meeting locations for onboarding, training, meetings, and events for development, department needs, and business delivery up to 5% of the time, with or without reasonable accommodation. This may be in addition to travel requirements, if applicable, as listed in this job description.
What Will Set You Apart:
- Bachelor's degree of science or engineering plus 7 years of distillation, enology, winemaking, or chemistry experience reflecting increasing levels of responsibility.
- Knowledge of spirits, spirits chemistry and spirits types.
- Knowledge of brandy, whiskey, and rum distillate production processes and experience with product blending.
Compensation:
- Hiring Salary Range Posted: $87,000 - $130,600/ year
- Actual compensation paid within the range will be determined by factors such as the education, experience, knowledge, skills and abilities of the applicant, internal equity, and alignment with market data.
