El Capitan Hotel features a restaurant serving classic California dishes inspired by the local bounty and produce of the Central Valley. The offerings extend throughout this historic property with three main outlets: From a full service three meal period restaurant, to a cafe bar and garden courtyard, where artisan coffees, crafted cocktails and lighter fare nourish locals and travelers alike. The property will host a bodega style market as well.
A short walk from El Capitan Hotel, Mainzer Theater is a communal gathering space for hosting live entertainment. The theater, with its multiple functions and spaces, features a screening room, a game room and a restaurant serving approachable American comfort food.
Near art galleries, the playhouse, movies, live entertainment at Merced Theater and Multicultural Arts Center, and seasonal events, the properties' role within the Main Street community and Merced's history is to serve as a vital, cultural hub within the Central Valley.

As a member of the properties Leadership Committee, the Assistant Director of Food and Beverage is a highly visible role with exposure to Senior and Corporate leadership. This position reports to the Director of Food and Beverage.
The Assistant Director of Food and Beverage is responsible for overseeing and directing Restaurants, Lounges & Cafes, Banquets, Stewarding, and any other Food or Beverage related areas operated by Hyatt.
Duties include:
  • Responsible for short and long term planning and the management of the Food and Beverage operations in the front and back of the house
  • Develop and recommend the budget, marketing plans and objectives and manages within those approved plans
  • Implement and maintain F&B sales/marketing programs
  • Direct and oversee development of colleagues
  • Hire, train, empower, coach and counsel, performance and salary reviews
  • Direct the implementation of the payroll, reports, forecasts, inventory and budget for food and beverage operations
  • Coordinate food and beverage operations with other hotel departments to ensure efficient guest service
  • Resolve customer complaints as appropriate to maintain a high level of customer satisfaction and quality
  • Implement procedures to increase guest and colleague satisfaction
  • Exercise quality control for both food and beverage
  • Maintaining Hyatt standards of service and ensure their implementation
  • Performing daily walk-through to ensure full compliance with Department of Health regulations and Hyatt Corporate standards
  • Maintain communications with Corporate Staff
  • Coach and counsel colleagues to reflect Hyatt service standards and procedures

Qualifications

  • Demonstrated ability to effectively interact with people of diverse socioeconomic, cultural, disability, and ethnic backgrounds
  • Minimum 3 years in a Restaurant General Manager role or higher position, 5 years preferred
  • Hotel with multiple food and beverage outlets experience required, preferably with previous experience in: restaurant buy-outs and banquet/catering
  • Upscale, independent restaurant management experience preferred
  • With opening hotels, previous hotel pre-opening experience preferred
  • With building teams from hourly positions through all leadership positions
  • Service oriented style with professional presentations skills
  • Proven leadership skills
  • Hotel/Hospitality degree an asset
  • Must possess the following strengths: high energy, entrepreneurial spirit, motivational leader, proven track record in high volume concept, effective communicator, effective in providing exceptional customer service and ability to improve the bottom line
  • Clear concise written and verbal communication skills in English
  • Must be proficient in Microsoft Word and Excel
  • Must have excellent organizational, interpersonal and administrative skills
  • Must have a commitment to quality and safety controls and assurances
  • Experience implementing new F&B concepts
  • Experience programming, coordinating and executing events
  • Must have a thorough knowledge of wine, alcohol, and beer, Cicerone or Sommelier certification preferred
