Job Overview
The Bakery Production Team Member will be accountable for assisting and fulfilling a variety of positions and tasks within the bakery production Department. Baker’s responsibilities include but are not limited to, mixing dough, shaping bread/pastries, preparing fillings, glazing pastries, lamination, as well as daily dish cleanup and space management. You should be bringing your creativity and ideas to the table to help elevate seasonal bakery menus, ensuring that the bakery is always providing fresh, quality, and delicious items to our guests, vendors, and clients to Company standards.
Duties/Responsibilities
- Daily production efficiency. Able to work well in a collaborative environment, to ensure that all products for the day are produced in a timely manner for product pickup and that items sent meet department quality standards. This requires a deep understanding of recipes and production standards, proper use of scales, as well as an understanding of basic methods/techniques of breaking baking, doughs, pies, cookies, lamination, creaming, custards, meringues, and mousse.
- Task refinement and feedback. You will be tasked with not only learning our recipes but being open to feedback on our processes to elevate your knowledge of day-to-day bakery operations. This requires a level of curiosity and brave accountability, to ensure that feedback is understood and implemented properly.
- Continuous education and skill refinement. You will be tasked with engaging and learning from other department Leaders as well as other Team Members to elevate and refine your skills. Mastery of tasks means that you can not only make the product to standard, but you can do so in a timely and efficient manner. In addition, you will be tasked with providing support to new Team Members as they are onboarded, teaching them your department’s practices to help integrate them into the Bakery production best practices in a timely manner.
- Quantity management. You are tasked with helping your department keep spoilage and waste to a minimum. To do so you will need to be able to fully read and understand Bakery Department recipes, as well as have common knowledge of proper storing techniques for items.
- Proper equipment management. You will know or learn how to work with high-end bakery equipment, from using/maintaining the equipment you will be accountable for its ongoing cleanliness and reporting any maintenance concerns.
- Shift management. Complying with attendance rules and being available to show up at work for your scheduled shift on a regular basis to meet Bakery Department’s daily and weekly goals.
- Work environment organization. Keeping workspace clean and organized, according to local state and city health department and FairWave policies and regulations. This will also require an understanding of our routes for the Market you operate in, as well as how our items are organized for route pickup.
Qualifications & Skills
- Minimum of one year of training and experience in the baking industry.
- Must be able to lift 50 lbs. to waist height.
- Must be able to lift 30 lbs. over your head as needed.
- Ability to work a flexible schedule, noting early start times will vary by Market to meet the business demands, which could include weekends and holidays.
- Ability to stand for extended periods of time, with shifts up to 12 hours in length.
