What are the responsibilities and job description for the Meat Cutter/Butcher position at Harpley's, LLC?
We are looking to add someone to our small team who has an upbeat and positive attitude. This position will be working in the butchering/meat industry/food industry.

We are a small team of 5 people going into an expansion. We are looking for a self-driven person who wants to be part of a team that is driven and wants to grow together. Because of a small team, this person will work on projects alone sometimes and therefore needs to be able to “own” the projects. We currently are looking for meat cutter to break down beef/hogs for wholesale and retail packaging in our production room. This position will work with the team to make products like snack sticks, jerky, summer sausage, etc.
Eventually, we are looking for one of the cutters, maybe YOU, to step into the role of our butcher at the front retail case once the expansion is complete. If that is not a goal of yours, that is just fine! We will have multiple new roles available as we expand.
Skills needed for this position:
-Process/cut and pack meat products to order specifications, by hand or equipment
-must have extensive bandsaw training and experience, slicer, grinder, etc
- Break down primals into proper cuts. (Experience with whole carcass breakdown not required, but does help.)
-Cut, trim, bone, or grind meats
- Maintain and work with processing equipment, aka Sharpening and adjust cutting, lockout/tagout, proper cleaning/maintenance
-Receive and Inspect meat.
-Maintain proper inventory/stock levels.
-Be able to identify various cuts of meat.
-Adhere to all company USDA requirements, SOPs, GMPs, procedures, etc.
-previous USDA Inspected facility experience is preferred
-Must have a serious focus on food safety and quality/sanitation procedures.
-Must be able to stand at station for length of shift and lift 50#s.
-Must be able to meet production quota, maintain a positive attitude and be punctual. (Bonuses given based on performance.)
-Ability to prioritize tasks, multi-task, balance friendliness with efficiency, and maintain focus.
-Ability to communicate effectively with customers and co-workers.
-Additional duties as assigned that are necessary (possibly delivering orders to customers when needed).
PREFERRED Additional Skills
-experience making sausage (seasoning blends, casings, etc)
-experience with unique cuts
-some leadership skills
Required experience:
- 8 years of cutting experience in a meat market/production
- Multi-year training and experience on bandsaw
- valid drivers license
We are a fun team, but we are also focused on the tasks at hand. There shouldn’t be many “down times” as there is always something that needs to be done. We are all team players and have no issue pitching in whenever and wherever needed. We are not a group of people that say “that’s not my job.” You will often find the owners sweeping the floor, picking up trash around the parking lot, or jumping in to help production when orders are needed to get done. As a small team, it is important to have an easy going personality, but also remain professional.
We are looking for someone who is motivated and wants to jump in and take initiative to get things done. The person that fills this position cannot be one who needs daily direction, waits until asked to do something, or feels the need to complain about jumping in to help others.

Hours usually between 7am-5pm, but may require some overtime on weekdays and weekends. Weekly schedules will be done ahead of time to allow revolving flexibility of schedules, but fairness in times will be assessed for everyone. (For example, if you need to go to an appointment one morning, we can schedule you for later in the day and someone can cover for you. This is where it is nice to have a team that all pitches in to get things done! But, there is also an expectation that call-outs or “leaving your team hanging” are not part of this flexibility.)
