What are the responsibilities and job description for the Food and Beverage Manager position at Haven Harbour Marina Resorts?

The Food and Beverage Manager is responsible for managing the daily operations of our two distinctly different restaurants located within the resort property. Responsibilities include, but are not limited to selecting, developing and evaluating restaurant employees, overseeing menu development, managing inventory of food and supplies, optimizing profits and ensuring guests are satisfied with their dining experience. The Food and Beverage Manager reports to the Haven Harbour Marina Resorts Ownership and General Manager.

ESSENTIAL FUNCTIONS & PRIMARY RESPONSIBILITIES

  • Oversee and manage all areas of our resort marina's two restaurants
  • Make decisions on matters of importance for the Haven Harbour Marina Resorts

Restaurant and Bar Businesses

  • This position will report directly to the Managing Director and be a business partner to many other managers and employees throughout the operation.
  • The Manager will be responsible for helping us integrate and operate new areas within the property.
  • The position requires a leader who will work with all the business partners for the overall benefit of the organization

FINANCIAL

  • Adheres to company standards and service levels to increase sales and minimize costs, including food, beverage, supply, utility and labor costs.
  • The Manager will be responsible for ensuring that all financial (invoices, reporting) and personnel/payroll related administrative duties are reported accurately, on-time and in accordance with company policies and procedures.

FOOD PLANNING AND SAFETY

  • Responsible for working with Resort Management; Develop core menus for two separate restaurants on the property with seasonal changes
  • Responsible for working with local distributors and farmers; Develop “specials” menus for weekend service during in-season operation and determine sustainable “specials” menus for off-season operation.
  • Responsible for ensuring consistent high quality of food preparation and service.
  • Maintain professional restaurant image, including restaurant cleanliness, proper uniforms, and appearance standards.
  • Estimate food and beverage costs. Work with Resort's office staff for efficient provisioning and purchasing of supplies. Supervise portion control and quantities of preparation to minimize waste.
  • Estimate food needs, place orders with distributors, and schedule the delivery of fresh food and supplies.
  • Enforce sanitary practices for food handling, general cleanliness, and maintenance of kitchen and dining areas. Ensure compliance with operational standards; company policies; as well as federal, state and local laws and ordinances.
  • Must be ServeSafe or other Nationally Recognized Food Safety Credential Certified.
  • Will uphold and enforce all Maryland State Food Safety guidelines.

GUEST SERVICE

  • Ensure positive guest service in all areas. Respond to complaints, taking any and all appropriate actions to turn dissatisfied guests into return guests.

OPERATIONAL RESPONSIBILITIES

  • The food and beverage manager will streamline all of our food purchasing for multiple departments.
  • The manager will need to be a partner and backup to our Inn Manager for breakfast service.
  • The manager will work with our event planner and any other appropriate parties for events. All alcoholic drinks for all events will need to be purchased through Haven Harbour Marina Resorts.
  • Developing a catering program, in the future, supporting Marina Events.
  • Ensure that proper security procedures are in place to protect employees, guests and company assets.
  • Ensure a safe working and guest environment to reduce the risk of injury and accidents.
  • Completes accident reports promptly in the event that a guest or employee is injured.
  • Manage shifts which include: daily decision making, scheduling, planning while upholding standards, product quality and cleanliness.
  • Investigate and resolve complaints concerning food quality and service.

PERSONNEL

  • Provide direction to employees regarding operational and procedural issues.
  • Interview hourly employees. Direct hiring, supervision, development and, when necessary, termination of employees.
  • Conduct orientation, explain the Haven Harbour Marina Resorts philosophy, and oversee the training of new employees.
  • Develop employees by providing ongoing feedback, establishing performance expectations and by conducting performance reviews.
  • Maintain an accurate and up-to-date plan of restaurant staffing needs. Prepare schedules and ensure that the restaurant is well staffed for all shifts.

COMMUNITY INVOLVEMENT

  • Provide strong presence in local community and high level of community involvement by restaurant and personnel.

QUALIFICATIONS

  • A minimum of three (3) years experience as a manager in a restaurant, hotel or other food and beverage location with equal volume, style of service, capacity and standard of service.
  • College degree is preferred. Bachelor of Science degree in hotel/restaurant management is desirable. A combination of practical experience and education will be considered as an alternative.
  • Knowledge of computers (Email, Microsoft Word and Excel).
  • Proficient in the following dimensions of restaurant functions: food planning and preparation, purchasing, sanitation, security, company policies and procedures, personnel management, record-keeping, and preparation of reports.
  • The Manager must have the ability to work flexible hours, including nights, weekends, and holidays, in addition to regular business hours, as needed.
  • Must possess a valid driver’s license.
  • Must be eligible to work in the United States.
  • Must agree to background and credit check.

  • Pleasant, polite manner and a neat and clean appearance.
  • Possess the ability to motivate employees working as a team to ensure that food and service meet appropriate standards.
  • Must be able to handle the pressures of simultaneously coordinating a wide range of activities and recommend appropriate solutions to restaurant problems.
  • Must possess good communication skills for dealing with diverse staff.
  • Has the ability to coordinate multiple tasks such as food, beverage and labor cost while maintaining required standards of operation in daily restaurant activities.
  • Has the ability to determine applicability of experience and qualifications of job applicants.

ACCOUNTABILITIES

  • Keeps Resort General Manager promptly and fully informed of all issues (i.e. problems, unusual matters of significance and positive events) and takes prompt corrective action where necessary or suggests alternative courses of action.
  • Completes job responsibilities and performance objectives in a timely and effective manner and in accordance with Haven Harbour Marina Resorts policies and procedures.
  • Maintains a favorable working relationship with all company employees to foster and promote a cooperative and harmonious working climate which will be conducive to maximum employee morale, productivity, efficiency and effectiveness.
  • At all times provides a favorable image of Haven Harbour Marina Resorts to promote its “Customer First” philosophy.
  • Performs other duties and responsibilities as required or requested

SUPERVISION OF STAFF

  • 25 employees each shift in season, fewer out of season.

WORKING CONDITIONS

  • Hours may vary dependent upon the season.
  • Manager must be prepared to fill in for employees or if emergencies arise.
  • Typical in-season work week is 50 hours, fewer hours out of season.
  • Ability to perform all functions at the restaurant level.
  • Position requires prolonged standing, bending, stooping, twisting, infrequently lifting supplies weighing 50 pounds and repetitive hand and wrist motion.
  • Work with hot, cold, and hazardous equipment, as well as operates phones, computers, copiers and other office equipment.
