SUMMARY OF DUTIES: Assists staff in the absence of their immediate supervisor and serves as back up to all Quality Assurance (QA), Sanitation Worker, Dishwasher and Commissary Warehouse duties. Ensures all QA, Culinary and other sanitation standard operating procedures (SOPs) are precisely followed and documented daily and that all critical duties are assigned to appropriate team members and completed during each shift by being a valued leader among their peers and sets an example to all Hearty Helpings, Inc. (HHI), FeedMore WNY (FMWNY) and external partners by remaining professional at all times.
RESPONSIBILITIES:
- Assist with ensuring proper assembly, service of foods, sanitation, and safety of service occurs daily and in accordance with all SOPs;
- Thoroughly clean and sanitize or ensure and oversee the cleaning and sanitizing of all production equipment, floors, walls, handles, surfaces, interior and exterior of drains and machinery in production processing areas using pressure cleaning and chemical dispensing equipment;
- Assist with and ensure completion of morning set up of ovens, ensuring that all ovens are immaculate interior and exterior and in working order. Take ovens that need repair out of service and work with facilities to ensure they are repaired. Reset breakers as required;
- Dissemble and reassemble equipment to remove any and all food, supplies or other products in machines, equipment and surrounding areas and ensure the utmost care is taken to protect all the electronic components on all of the equipment from water or chemicals by adhering to the SOPs and covering as needed;
- Use proper precautions and protective gear to safely use a variety of chemicals during the cleaning process and also ensure with management that the proper cleaning tools are being used in the proper areas to prevent cross-contamination and to ensure that equipment does not get damaged, scratched, nicked, dented or otherwise damaged internally or externally;
- Execute master sanitation schedule: daily, weekly, monthly, semi-annually, and annually;
- Coordinate with QA staff the daily needs of the facility, issue daily checklists and ensure lists are signed and completed at the end of the day;
- Maintenance of all QA records and completion of all QA filing;
- Prepare and maintain all necessary documentation including various reports and forms to document cleaning, QA, stored, received and held food temperatures and other necessary reports and schedules;
- Report immediately any issues noted like equipment or parts damaged during daily tasks or returned from sites to Procurement and Food Safety Director and/or General Manager;
- Monitor and adjust chemical cleaning usage and ensure proper titrations abiding by safety protocols;
- Ensure in the process of cleaning that all taps are fully closed and any standing water is properly cleaned and removed to prevent pest attraction, bacterial risk and slips/falls;
- Ensure facility and equipment are clean, sanitized and ready for operation daily and provide all necessary support to the culinary, QA, driver and administration teams on an ongoing basis and as requested;
- Follow prescribed procedures in setting up hot and cold food lines and frozen meal packouts;
- Check coolers to ensure they are filled correctly and that dates are within safe parameters as per contract requirements, reporting any concerns to the Procurement and Food Safety Director and/or General Manager;
- Assist with food pack-out as directed, operate driver equipment as required to complete tasks;
- Follow all safety and sanitation guidelines and regulations to ensure quality food service;
- Attend to day-to-day problems and needs concerning driver equipment, ovens and coolers; remove defective supplies/equipment, and/or other unusual conditions;
- Organize, conduct and keep track of all ServSafe and QA/food safety related trainings
- Organize and distribute birthday cakes and other special items for Congregate, Home Delivered Meal and private contract clients;
- Assist with safe and appropriate storage, refill, and use of sanitation chemicals/products, and ensure daily refilling of soaps, paper towels and other necessary items in all hand washing and other sinks in the facility;
- Assist with any and all mission work as needed and requested with some or no prior notice including, but not limited to: serving as a truck spotter, helping with FARM Market/Community Garden/Freight Farms/on and off site food distributions, preparation and packout of meals; and
- Other duties as assigned or needed.

- Must be able to work in a hot and damp and/or cold environment as well as manage fluctuating internal and external temperature conditions.
