JOB DESCRIPTION
Objective
The Chef De Cuisine with assistance from the sous chef oversees the daily culinary operation of Hometown to ensure that operational procedures, standards and Budgets set by the Executive Chef are followed and completed daily. The salary based position will require an average of 48-52 hours weekly not to go beyond 55. The Chef de Cuisine will be required to work with FOH managers to ensure balance and teamwork is at the for front of the daily operations while upholding culture standards set by Hometown.
Reporting
Reports directly to Executive Chef and General Manager
Daily Operating Functions
Menu Execution
- Assist Executive Chef on Menu Roll Outs
- Updates all Recipes On Stations
- Ensuring Kitchen Staff is Following Recipe Standards and Plating Procedures
- Assist Executive Chef in creating Innovative Specials and Desserts
- Improving New/Old Dishes to Stay Relevant
- Assist in Photo Shoots, Marketing and Any Off Site Events
Teaching
- Teaching New Menus to Kitchen Staff
- Teaching Seasonal Specials to Kitchen Staff
- Development and Support of Sous Chef
- Training of New Kitchen Members with assistance from Sous Chef but is 100% responsible for development
Budgets
- Meeting Food Cost Budget set by Executive Chef
- Meeting Labor Budget set by Executive Chef
Operational
- Kitchen Cleanliness
- Covering Call Outs with assistance from Sous Chef
- Proper Rotation of Food
- Assist in Food Ordering
- Monthly Inventory
- Minimizing Food Waste
Job Type: Full-time
Pay: $60,000.00 - $70,000.00 per year
