What are the responsibilities and job description for the Pastry Sous Chef position at Hwaro?
We are looking for an Pastry Sous Chef to lead both new projects under Chef Thomas Raquel.
Gui/Hwaro (opening in early 2024), is a new concept by Sungchul Shim and the team behind Michelin starred Kochi and Mari.
Hwaro is a chef’s table dining concept located inside the soon to open Korean-steakhouse Gui. Hwaro will offer a fine-dining, counterside-open kitchen tasting menu highlighting exquisite and upscale ingredients throughout the meal.
Gui is an American-Korean Steakhouse (not a K-BBQ) with flavors influenced by diverse cultures of NYC. A menu created by chefs with a Korean heritage, American upbringing, and Global flavor understanding.

Responsibilities:
- Overall management of the pastry team operation for both concepts with the pastry chef
- Assist in creation and development of dessert menus and recipes
- Handle schedules and hours of the team
- Hire and train the team to uphold company policies and standards
- Manage all food costing including ordering, deliveries and inventory within the budget limitations
- Maintain and ensure compliances with all regulations of New York City’s health and safety protocol
- Work with the Executive Chef/CDC to create a centralized kitchen
Qualifications:
- Open-availability including all major holidays
- 3 years of having fine-dining, preferably Michelin-rated, management experience of a pastry team
- A genuine passion and knowledge for food and pastries
- knowledge and appreciation of Korean cuisine and seasonal cuisine is a plus
- A strong sense of urgency and strong communication skill
- Able to take constructive criticism, learn quickly, and constantly improve
- Must be meticulously clean and aware of all food safety standards
