The Banquet Sous Chef is the culinary manager for all events and supports the restaurants when there are no events. This Chef is the main driver of food quality and consistency for events. They should be a leader in their space and set the tone for the rest of the team. They work directly with events manager, sales coordinators, and Executive Chef. The Banquet Sous Chef role is a steppingstone to becoming an Executive Sous Chef.
A Miraval Banquet Sous Chef must meet several expectations to be considered successful in their role:
- To communicate clearly and be decisive in their actions.
- To be a positive mentor for junior chefs, hourly associates, and all other colleagues throughout the resort.
- To be well groomed at all times and be confident in interacting with hotel guests.
- To be solutions oriented.
- To work in a timely manner and ensure that all events food is set according to the event order.
- To be well versed in the use of Hyatt systems such as Kronos, Hot SOS, and Birch Street.
- To be able to support the Executive Sous Chef in ordering.
- To manage Microsoft Outlook and respond in a timely manner to requests from colleagues, vendors and guests.
- To attend a daily management meeting with the culinary management and the Executive Chef.
- To attend the banquet menu readings.
- To drive food safety and workplace safety on a regular basis in line with Ecosure guide lines.
- To possess a valid food safety management certification through Servsafe, along with an allergy certification.
- To be confident in expediting a meal service and remaining calm under pressure.
- To have knowledge of all menus for their kitchen and be able to speak to them confidently with the FOH, BOH and guests, including concerns regarding food-related allergens and dietary concerns.
- To report via appropriate channels and follow up on any engineering concerns in their kitchen.
- To communicate clearly with the purchasing manager on requisitions, purchase orders and general purchasing concerns.
- To be open minded and have a desire to continue to grow and learn in the role.
Qualifications:
- In-depth skills and knowledge of all kitchen operations
- Possess strong leadership, communication, organization and relationship skills
- Experience with training, basic financial management and customer service
- Proficient in general computer knowledge
- A true desire to exceed guest expectations in a fast paced customer service environment
- Capable of producing a consistent product in a timely manner
- Strong training and communication skills
- Culinary education and/or on the job training, hotel experience preferred
- Schedule flexibility preferred
