The Fish Cutter position is responsible for preparing and cutting fish according to the established standards and customer preferences. As a Fish Cutter, your main duties include filleting, scaling, and portioning fish, as well as ensuring that all fish products are of high quality and meet food safety regulations.
- Cut, trim, and fillet various types of fish with precision and accuracy.
- Remove scales, fins, and bones from fish to prepare them for further processing.
- Use knowledge of different fish species to determine the most appropriate cutting methods.
- Adhere to strict hygiene and food safety regulations during the cutting process.
- Inspect fish for quality, freshness, and any signs of spoilage, and take appropriate action.
- Maintain a clean and organized work area, including proper storage of tools and equipment.
- Adhere to safety protocols to prevent accidents and injuries.
- Proven experience as Fish Cutter
- Food safety knowledge
- Quality control: ability to inspect fish for freshness, quality, and signs of spoilage
- Employee is always required to take on the responsibility and wear appropriate Personal Protective Equipment (PPE) as determined by position and duties
- Great attention to detail
- Diligent and punctual

Physical Requirements
The employee frequently is required to stand and walk. The employee is occasionally required to sit; use hands and fingers, handle, and feel; reach with hands and arms; climb or balance; stoop, kneel, or crouch. The employee must occasionally lift and/or move up to 50 pounds. The employee will be exposed to a noisy environment that varies from hot to cold in temperature.
