Job Description: Chef
Responsible for daily operation of kitchen, executing 50 – 150 covers per meal (lunch through dinner)
Responsible for training and daily supervision of 5-6 kitchen staff
Responsible for maintaining serve safe standards
Responsible for cleanliness and organization of all kitchen and storage areas
Responsible for food and labor cost goals
Assist with menu development, costing and pricing for retail service as well as banquet service
Prep and execute retail menu on a daily basis
Prep and execute banquet menu(s) as required for group service
Responsible for maintaining quality food preparation and presentation
Assist with ideas for restaurant promotions, signature dishes, visibility concerns, etc.
Prepare weekly schedule based on anticipated retail and banquet cover counts
Daily/weekly food and supply ordering
Monthly food inventory
Coordinate with front of the house/front office on group meal planning and anticipated retail covers based on hotel occupancy
Season Dates – early May to late October
