Position: Director of Beverage
Reports to: Owner Stephan Outrequin

LM Restaurants currently include Grant Park Bistro, River North Bistro, Land & Lake Kitchen, Land
& Lake Andersonville, Land & Lake Ravenswood, and Land & Lake Rosemont.
LM Catering & Events include City View Loft, Kitchen Chicago, Lacuna Events by LM, LM Studio, and 26 event venue at the Eurostars Mag Mile Hotel and Sky on Nine event venue at the newly remodeled Staybridge Suites/Holiday Inn in Rosemont.
What will I be doing?
The Beverage Director has complete responsibility of all Beverage Operations and directly responsible for ensuring employees are trained and practice responsible alcohol awareness and guest service.
Director of Beverage will oversee and enhance the beverage program across all Food & Beverage
Restaurants of LM Restaurant Group. As the Director of Beverage, you will be responsible for
creating, developing, and executing cocktail, beer, wine, and non-alcoholic beverage programs to ensure exceptional quality and guest satisfaction that adhere to LM Restaurant Groups concepts.
Essential Functions
- Direct management of all Beverage operations, including, training, coaching, and counseling, auditing/inspecting work to ensure standards are met, promoting teamwork and inclusiveness, scheduling, conducting performance management with staff. Staff Training and
Compliance: Conduct regular training sessions to educate the staff on beverage preparation techniques, menu knowledge, and service standards.
- Ensure seamless integration of beverage offerings with the overall event concept.
- Enforce compliance of the alcoholic beverage commission regulations. Monitor associates for adherence to Chicago, Cook Country, and Illinois laws. Standardization and Controls:
Establish and enforce standard practices and controls across all beverage operations.
- Oversee programs and processes to identify efficiencies and to reduce costs in all areas of responsibility.
- Maintain positive client and guest relations; respond to client requests and ensure alignment with company standards; investigate and follows through on client and guest complaints.
- Develop and Execute Beverage Programs: Design innovative and enticing cocktail, beer, wine, and non-alcoholic beverage programs that cater to diverse guest preferences.
- Achieve Beverage operational objectives by contributing information and recommendations to strategic plans and reviews; preparing and completing action plans; implementing production, productivity, quality, and customer-service standards; determining system improvements and implementing change.
- Develop budget and monitor profitability of Beverage operations; recommend and establish pricing and portions for products and services within approved profit and plan guidelines.
Manage operating expenses and labor costs.
- Ingredient Sourcing and Implementation: Source, produce, and implement fresh juices, syrups, shrubs, and other ingredients to enhance the flavors and visual appeal of beverages.
Implement strategies to control costs without compromising quality.
- Elevate the overall quality of the beverage offerings through creative and unique ingredient combinations.
- Coordinate with LM Catering & Events: Collaborate with the Catering & Events team to develop specialty bar programs, tastings, and experiences for clients.

Qualifications
Education: bachelor’s or higher degree in related field preferred but not required.
Experience: 7 Years progressive experience in managing Food & Beverage or Beverage operations. This role requires a strong understanding of mixology, ingredient sourcing, and beverage cost management.
Computer Skills: Ability to utilize computer software and hardware required. Ability to easily maneuver on computer keyboard required. Ability to learn, utilize and communicate effectible via company issued communication devices (e.g., laptops, phones, etc.). Problem solving and analytical skills.
Communication: Advanced ability to comprehend and speak English to understand and respond to information and address advanced requests from owners and guests alike both verbally and in writing. Knowledge of additional languages preferred but not required.
Other: Must be customer-service oriented and have excellent hospitality skills. Must be able to calculate basic Mathematic functions. Ability to work flexible schedule to include weekends and holidays.
