Job Description
As the Executive Sous Chef, you play a vital role in the culinary team. The Executive Sous Chef serves as the second-in-command in the kitchen and is responsible for assisting in the overall management and coordination of kitchen operations. You will collaborate with the Executive Chef and the Corporate Chef of Pomeroy Brands to develop and maintain high culinary standards and to provide leadership and support to the culinary team.

Key Focuses
- Collaborates with the Executive Chef to create and implement new menu items, special offerings, and food promotions.
- Oversees day-to-day kitchen operations, ensuring that food preparation, cooking, and plating are carried out efficiently and in accordance with established recipes and standards.
- Provides leadership and support to the culinary team, including training, mentoring, and coaching.
- Enforces strict adherence to health and safety regulations, sanitation guidelines, and food handling procedures. Conducts regular inspections to maintain a clean and safe environment.
- Maintains a keen eye for detail to ensure that all dishes leaving the kitchen meet quality and presentation standards. Promptly addresses quality issues and takes corrective action.
- Assists in managing food and labour costs by controlling portion sizes, minimizing waste, and optimizing kitchen productivity.
Experience/Passions/Education
- Minimum five years of Sous Chef experience.
- Proficient with Excel.
- Experience using costing/inventory software.
- Journeyman’s papers (Red Seal) or international equivalent required.
- Valid Foodsafe certificate or advanced (Level 2) Food Safety certification is preferred.
Working Conditions
This position may work day, afternoon, or evening shift any day of the week or weekend with long days to meet periodic upturns in business demands or meet deadlines. This position is set in a fast-paced and, at times, high-pressure environment that requires continuous physical movement, the ability to lift up to 30 lbs., and the ability to manage multiple sequences and demands. There may be periods of independent work and changes in temperature from the back to the front of the house.
