Quince is a Three Michelin Star and Michelin Green Star restaurant serving California contemporary cuisine grounded by Italian culinary principles and Chef Michael Tusk’s lifelong respect for seasonality, terroir and artisanal producers, highlighting produce from the restaurant’s farm in West Marin.

WHO YOU ARE :
The Quince bartender is responsible for the execution and efficiency of all beverages to be served within the restaurant while providing hospitality of the highest stature.
Accurately conveying the distinction of the cocktail, liquor, beer, and non-alcoholic beverage offerings based on their seasonality, inclusion of Fresh Run Farm harvest ingredients, direct grower / farmer products, and innovative techniques is of the utmost importance.
This individual must be knowledgeable in their craft to provide an experience that evokes the uniqueness of the cuisine, Northern California bounty, and the spirit of Quince.
This position will foster and challenge your creativity, uphold your ability to think proactively for bettering the experience of our guests, as well as fortify your skills as a world-renowned hospitality professional.
This individual will strive to continuously educate themselves and their colleagues in the beverage area of expertise where appropriate to deepen the knowledge of cocktails, liquor, spirits, tea and coffee to be served at Quince.
POSITION RESPOSIBILITIES
Pre-service setup
- Procurement and stocking of necessary items to maintain established pars
- Ensure all perishables are fresh, presentable, and plentiful
- Menu knowledge and pairing execution
- Ability to work in tandem and independently to ensure beverages and pairings are provided on time throughout the restaurant for coursing execution
- Adherence to steps of service and table maintenance, providing extensive menu description
- Appropriate assistance in tableside elements
- Facilitating timely beverage needs to guests, providing guidance and program insight
- Station cleaning and maintenance
- Detailed fulfillment of outlined station practices
- Working in a manner to guarantee and uphold the care of the station, its tools, provisions, and products of the restaurant as a whole
Creative input and cocktail development
- Facilitate the evolution of the cocktail, spirits, tea, and coffee program at Quince
- Utilize scheduled research and development time appropriately
- Suggest ideas, recipes, historical references, tools, and techniques
- Provide cocktail tastings for potential menu placement and inclusion
- As an extension of the Quince culinary team, you are a liaison of the Farm to Table philosophy
- Farmer’s Market product research and tasting
- Fresh Run Farm current and future harvest list review
Financial
- Weekly / Monthly sales review with Beverage Director
- Collective brainstorming to create incentives leading to greater revenue
- Inventory oversight
- Assistance in logging depletion of Quince inventory for proactive replenishment and sourcing of replacement items
- Rotate and utilize product through inventory analysis
- Product acquisition
- Suggest appointments and tastings with vendors to source new products
- Attendance of scheduled educational events, distillery, winery and brewery tours for collective product research
Education and Training
- Assist in training of all new hires in beverage selections and cocktails
- Attend staff education meetings to taste and discuss products
- Uphold and communicate proper etiquette for fellow colleagues. Maintain and demonstrate consistency and cleanliness by using outlined techniques.
- Build strong relationships amongst vendors to create educational and purchasing opportunities
EDUCATION AND EXPERIENCE :
- At least 2 years of bartending experience at a fine dining establishment
- Michelin experience preferred
- Food Handler’s certification
