Rosella is hiring sushi chefs!

Rosella is an intimate 28 seat sushi bar in Kennebunkport. We focus on serving locally sourced new American sushi with a menu that highlights often overlooked, domestic species with an emphasis on locally caught fish and shellfish. Some species come from sustainable farms, while others are wild caught through methods with minimal environmental impact.

We are looking for a sushi chef for a full-time position.

Compensation is a competitive hourly rate, with consistent gratuity. Full time sushi chefs can expect to make between 60 – 70k yearly.

Responsibilities include:

• A passion for sushi and Japanese cuisine
• An interest in learning more about American fish and their application for sushi.
• Prepping and executing several types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety.
• Prepping for and managing a station from start to finish
• Taking guests while simultaneously preparing food for the restaurant. (Sushi chefs are responsible for serving the guests seated in front of them at the sushi bar)
• Executing food at high level in a timely manner
• Cleaning and cooking rice
• Being an organized team player who can manage a prep list and communicate needs
• The ability to work under pressure and function in an open kitchen
• Excellent time-management skills

Expected skills:

• At least 2 years of experience in a professional kitchen (sushi or Japanese is preferred).
• Preparation of nigiri
• Clean and tight sushi rolls
• Some understanding of fish breakdown and fabrication
• Strong knife work and prep skills
• Ability to pick up new skills quickly
• A positive and team-forward attitude
• Comfortable engaging with guests to create a connection
• Ability to multitask, the job will involve taking care of and serving guests while simultaneously preparing food for the restaurant.
• Cleanliness, efficiency, speed, and organization
• A trustworthy and reliable nature
• Open availability including weekends



While experience is preferred, along with a genuine desire to learn and grow. We are willing and expect to train the right person.
