- Knowledge of the safety in handling, and proper use of sanitation chemicals and equipment to safeguard guests and our fellow team members against invisible enemies.
- Respect, ability, safe use, and maintenance of all kitchen tools.
- The ability to properly set a station’s mise in place for all services - everything has its place -; and an understanding of the order in which to operate to keep you in place during service.
- The ability to complete an inventory, and assess pars; both while in motion, and at the beginning and end of services.
- An ability to see and understand small details, and what they mean to product and guest experience.
- A deep respect for the role of the prep team in the operation, and how it relates directly to your station.
- The ability to execute all dishes on your station flawlessly.
- Knowledge and understanding of how all items should taste, and how to adjust as such.
- An understanding, and respect for the integrity of all products, when to discard, and when to start over.
- The skill of moving effectively, quickly and gracefully through our space, with fellow team members.
- An advanced understanding and respect for allergens (i.e. tree nuts) in our space, and how to properly navigate around them to guests and team members’ safety.
- Knowledge, and respect for what things cost within a kitchen. A goal of not only creating delicious food but, also what it costs to make said food, and how to develop recipes with knowledge of Theoretical Cost.

Ultimately, your role is to make delicious food; delicious food is one of life’s pleasures and the only biological necessity that is done socially, in a joyful, entertaining form. When we can eat well, it enriches our life; and you are the conduit for that. In breaking bread with others, you share an emotional attachment, a breaking of bread together to nourish others physically and emotionally. When we can do that well, the dream of CH is realized. As a cook, you are primarily responsible for the food being consumed. The struggle is consistency; it takes a kitchen team working towards a synchronized goal, as each dish may be crafted by countless members. This is hard, beautiful work. At the peak of service, under stress, it may be a challenge to keep composure, but the work put forth here to be a teammate in line of fire is the heart and soul of the job. No one person can be the master of this destiny, if we play our roles, we can not be stopped.
