About the Company
The Sour Doe is a café and farm store focused on preparing and selling delicious, healthy food to its customers. We pride ourselves on sourcing our ingredients from local, organic suppliers and farmers as much as possible. In fact, the Sour Doe is partnered with its very own, USDA certified organic vegetable farm only 4 miles down the road. Mutually owned by the founders of the Sour Doe, Fern Co. is an intensive, no-till market garden that grows the vast majority of the produce used at the Sour Doe. In addition, the Sour Doe has an in-house bakery focused on naturally leavened breads and baked goods. All our bread products used in our café menu are made right here at the café.
Together, these two entities are developing a more diversified weekly box program that will soon provide a large list of add-ons for our customer’s culinary adventures. We intend to offer regular pickups of vegetables, fruits, breads, herbs, dairy and meat to our box subscribers.
Position Summary
The Baker is the leader of our bakery department. They are responsible for maintaining organized records of all baking operations as well as conducting daily baking and preparation of baked goods for sale to customers. The ideal candidate will have interest in learning how to integrate local food with our café and storefront. Starting date: ~ April 18 - May 1st, 2022.
Roles and Responsibilities
- Weighing ingredients, following recipes, baking different products, mixing and dividing dough with heavy duty mixers, etc.
- Ensure profitability by maintaining an accurate record of baking operations
- Manage needed supplies and inventory levels
- Direct and supervise the production staff’s activities to make sure that products are up to standards
- Assess the quality of raw materials before baking
- Conduct research to develop original recipes for products
- Ensure the proper cleaning and storage of baking utensils
- Daily preparation, baking and proper storing of all baked goods
- Train and supervise additional bakery staff with support from management
- Developing and executing rotating bakery item specials when warranted
- Maintaining the bakery and surrounding areas in conditions that meet or exceed company standards and health code regulations
Additional Responsibilities
- Developing new methods and processes to increase efficiency in the preparation of bakery products.
- Identifying and introducing new baking techniques
- Justify cost of new ingredients through timing studies, preparation trials and cost of production calculations
- Maintain detailed records (e.g. timing studies, labor/food costs, inventory, waste spoilage log) and report to restaurant manager to set item prices
- Determining and maintaining portion size control
Requirements
- Proven work experience in a bakery setting
- Excellent record of management and organization skills
- Ability to spot and resolve problems efficiently
- Capable of delegating multiple tasks within tight deadlines
- Excellent time-management skills
- Ability to remain calm and focused in a fast-paced environment
- Familiarity with professional kitchen equipment, including mixers and commercial ovens
- Understanding of food safety practices
- Flexibility to work some early morning shifts
- Communication and leadership skills
- Working knowledge of various computer software programs (MS Office, restaurant management software, POS)
Salary and Benefits
- $11-$14 per hour starting wage (DOE), 90-day probationary period followed by a review
- 5 days unpaid vacation for remainder of 2022 calendar year; 10 unpaid vacation days per year thereafter (for full-time employees only)
