Overview:
Ocean Course Hokuala is seeking a dynamic and experienced Food and Beverage Task Force Consultant to enhance the culinary offerings and operational efficiency across its outlets. The consultant will collaborate with Hawaii State Health Department, Kauai County Liquor Commission, and internal stakeholders to elevate food menus, craft Hawaiian-inspired cocktails, optimize service equipment, provide staff training, and drive revenue growth.
Key Responsibilities:
Menu Development and Beverage Curation:
Collaborate with Hawaii State Health Department and Kauai County Liquor Commission to create innovative food menus and Hawaiian-inspired cocktails for The Hokuala Social Club Bar, Golfzon Simulator, and Hale Kiele Snack shop.
Operational Efficiency:
Develop equipment lists for all food and beverage outlets to ensure efficient service of food and drinks.
Staff Training and Compliance:
Provide comprehensive training to food and beverage employees on menu offerings, operational procedures, and adherence to health code regulations.
Strategic Proposal:
Create a proposal for the establishment of a Michelin-starred restaurant and interisland food market at Keiki Lani, focusing on concept development, feasibility, and profitability.
Revenue Growth:
Implement strategies to increase revenue by $60,000 year over year from April 1st through June 30th through menu enhancements, promotional activities, and operational improvements.
Management Support:
Mentor food and beverage managers to optimize performance and foster a culture of excellence.
Additional Duties:
Assist in procuring a food truck and finding a suitable commissary kitchen to expand culinary offerings and operational capabilities.
Requirements:
Proven experience in food and beverage management, menu development, and operational optimization.
In-depth knowledge of health code regulations, liquor laws, and industry best practices.
Strong leadership and communication skills to effectively train and mentor staff.
Demonstrated ability to drive revenue growth and implement strategic initiatives.
Familiarity with Hawaiian cuisine and mixology preferred.
Bachelor’s degree in Hospitality Management, Culinary Arts, or related field preferred.
