What are the responsibilities and job description for the Banquet Cook position at Turfway Park?
- Ensure food safety by dating and rotating food containers, safely storing perishables, and maintaining a sanitary work environment
- Communicate with the Banquet Chef regarding menu items, problem situations or shortages
- Maintain food service sanitation certification and use all learned standards within the kitchen
- Maintain sanitation, health, and safety standards in all work areas
- Visually inspects, selects and uses only food items ideal for food production, in the preparation of all menu items
- Taste test and evaluate foods before serving to make sure standards are met
- Maintain working knowledge of kitchen equipment including a broiler, steamer, grill, fryer
- Reads and understand BEO prepare food items according to established recipes & menu plans
- Run the day to day operation of the assigned station
- Performs other related duties as assigned by Banquet Chef
- Prepare salads and other cold items
- Prepare all items for meal service including sauces, soups, setup, and any other items associated with the daily menu
- Arrange and organize the line and steam table to facilitate meal period cooking and service
- Prepare all orders as turned in by service staff and ensure all orders are cooked quickly and according to order
- Ensure all food is stored in proper containers and at proper storage and holding temperatures
- Cook only sufficient food in advance to cover expected business volume and maintain quality
- Prepare all food for next shift and the following day as required and directed by Banquet Chef
- Check food to make sure of its quality and correct temperature
- Regulate temperatures of ovens, grills and other cooking equipment
Qualifications
- Minimum 2 years cooking experience, preferably high volume
- 3 years of previous line experience preferred, preferably high volume plus 2 years fine dining experience
- Must have 1 or more years experience in cooking field
- Must be able to work a flexible shift to include AM/PM, weekends, nights and holidays
- Must be able to stand for more than eight hours during shift
