We are currently seeking a highly skilled and experienced Lead Line Cook to serve as the second in command to our Head Chef at WEST10WEST. As the Lead Line Cook, you will play a pivotal role in supporting the Head Chef in all aspects of kitchen operations, ensuring the delivery of exceptional culinary experiences to our guests. This position requires strong leadership qualities, exceptional culinary skills, and the ability to work in a fast-paced and dynamic environment.
Responsibilities
- Culinary Execution
- Assist the Head Chef in overseeing all food preparation and cooking activities, ensuring adherence to menu standards, recipes, and quality expectations.
- Demonstrate expertise in various cooking techniques and cuisines, taking the lead in executing complex dishes and maintaining consistency.
- Collaborate with the Head Chef to develop and refine recipes, ensuring innovation and creativity in our culinary offerings.
- Leadership and Kitchen Management
- Act as the second in command to the Head Chef, assuming responsibility for the kitchen in their absence.
- Provide guidance, support, and mentorship to the kitchen team, including line cooks, prep cooks, and dishwashers, fostering a positive and collaborative work environment.
- Delegate tasks effectively, ensuring efficient and timely execution while maintaining high standards of quality and presentation.
- Assist with training new kitchen staff, ensuring they are familiar with kitchen procedures, safety guidelines, and food handling practices.
- Coordinate with the Head Chef to develop and implement standard operating procedures, optimizing kitchen efficiency and productivity.
- Quality Control and Plating
- Collaborate closely with the Head Chef to ensure that all dishes leaving the kitchen meet our high standards of taste, quality, and presentation.
- Conduct regular quality checks during food preparation and cooking, addressing any issues or inconsistencies promptly.
- Play a key role in ensuring precise plating and garnishing techniques, enhancing the visual appeal of our dishes.
- Inventory and Ordering
- Assist the Head Chef in monitoring inventory levels, conducting regular stock assessments, and coordinating with suppliers to ensure timely ingredient and supply replenishment.
- Collaborate with the Head Chef to develop and maintain efficient systems for inventory management and cost control.
- Team Collaboration and Communication
- Foster effective communication and teamwork among kitchen staff, ensuring smooth coordination and cooperation.
- Collaborate closely with the Head Chef and other team members to develop new menu items, daily specials, and seasonal offerings.
- Act as a liaison between the kitchen and front-of-house staff, ensuring clear communication and understanding of menu items, dietary restrictions, and customer preferences.
Experience Required
- Proven experience as a line cook or in a similar role, preferably in a high-volume and upscale restaurant.
- Strong culinary skills and in-depth knowledge of various cooking techniques, international cuisines, and culinary trends.
- Previous experience in a leadership or supervisory role, supporting and guiding kitchen staff.
- Excellent organizational and time management skills, with the ability to handle multiple tasks and prioritize effectively.
- Exceptional attention to detail and a passion for delivering consistently high-quality dishes.
- Strong communication and interpersonal skills, with the ability to work collaboratively and communicate effectively with team members at all levels.
- Formal culinary training and relevant certifications are a plus.
