Role Summary:
Join the White Barn Inn as a AM Restaurant Supervisor and become one of the authors of our story. As part of the team, you will be responsible for directing servers, hosts, bartenders and bus-persons on table service in assigned station according to hotel specifications, courteously and efficiently. Take food and beverage orders when necessary; retrieve and serve food and beverage orders to guests' tables. Collect payments. Assist in the maintenance of the Restaurant/Bar area and equipment. Supervise, coordinate, and if necessary deliver, in room dining orders and in room morning coffee delivery.
Core Responsibilities:
Maintain complete knowledge of:
All liquor brands, beers and non-alcoholic selections available in Restaurant, Bar and Pool Bar.
The particular characteristics and description of every wine/champagne by the glass and major wines on the wine list.
Designated glassware and garnishes for drinks.
All menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation and prices.
Daily menu specials, 86'd items.
Restaurant layout, table/seat/station numbers, proper table set-ups, room capacity, hours of operation, price range and dress code.
P.O.S. and manual system procedures.
Daily house count, arrivals/departures, VIPs.
Scheduled in-house group activities, locations and times.
Correct maintenance and use of equipment.
All department policies/service procedures.
Employee Handbook.
Maintain complete knowledge and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving.
Prepare weekly work schedules in accordance with staffing guidelines and labor forecasts. Adjust schedules throughout the week to meet the business demands.
Ensure that restaurant reservations/cancellations are taken, recorded and confirmed in
Complete all paperwork and closing duties in accordance with departmental standards. Review status of assignments and any follow-up action with on-coming supervisor.
Attend designated meetings, menu and wine tastings.
Expedite on floor or in kitchen as business demands.
Conduct five day formal training program on the required job functions with criteria expected and department orientation with new hires. Conduct ongoing training with existing staff.
Complete and direct scheduled inventories.
Train and monitor that sequence of service is being followed by staff.
Maintain a daily channel of communication with the Director of Food and Beverage regarding the daily operations.
- Perform other duties as directed, developed or assigned.
Qualifications:
Required:
High School graduate
Minimum 21 years of age to serve alcoholic beverages
5 years experience as a fine dining or upscale casual server
- Ability to satisfactorily communicate in English with guests, management, members and co-workers to their understanding
- Ability to work flexible schedule, to include weekend and evenings as needed for the benefit of departmental coverage.
Desirable:
Food Handling Certificate
Previous experience as a Fine Dining Captain.
Certification of previous training in liquor, wine and food service.
Any previous Culinary training.
Certification in alcohol awareness program.
Certification in CPR
Knowledge of Computerized P.O.S. systems, preferably Micros.
