Principle Responsibilities/Position Purpose:
Responsible for excellent food and beverage service to all guests at the Wrigley Mansion.
EXAMPLE OF DUTIES:
ESSENTIAL FUNCTIONS

Percent of Time
10 % Stocks all dining room service areas to ensure all needed equipment is available, clean and ready for service. This includes, silverware, glassware, linen, menus, S&P, etc.
Sets up and tears down POS terminal areas. Details the dining room to ensure all tables are 100% ready for guests. Maintains adequate amounts of supplies. Completes opening and closing checklists daily.
40 % Greets and assists guests in the dining room with excellent customer service. Recites specials, explains menu items and makes appropriate recommendations. Takes orders properly and ensures all is entered into the POS terminal correctly. Checks to ensure all food and beverage is prepared and served properly to guests. Assists with additional guests needs throughout their experience. Clears all dirty dishes and plates at the proper time and presents an accurate and timely bill. Processes the bill correctly according to cash handling procedures. Follows WMC standards of service. Directs
Server Assistant accordingly.
15 % Serves all food and beverage according to WMC standards. Follows all health and safety guidelines and all Arizona State Liquor Laws in the handling and preparation of all alcoholic drinks. Knows and understands the WMC wine list and makes appropriate recommendations. Properly serves bottles of wine.
20 % Washes & polishes glassware, china and silver to keep up with business levels. Transports dirty glasses/equipment in a safe manner to the dish area and returns clean glasses/equipment to the dining room. Resets tables properly and organizes tables and chairs according to floorplan. Runs food when needed. Irons table cloths when needed.
10 % Maintains cleanliness of dining room, service areas and kitchen service area to comply with health code standards. Removes boxes and trash in a timely and discreet manner.
5 % Completes other duties as assigned by Manager or Captain.
SUPPORTIVE FUNCTIONS
In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the percentage of time performing each function to be solely determined by the supervisor based upon the particular requirements of the company.

Assist and work in other capacities such as Banquet Events or Bar service.
Regular attendance in conformance with the standards, which may be established by Wrigley Mansion from time to time, is essential to the successful performance of this position.
Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs of the Wrigley Mansion.
SAFETY REQUIREMENTS
Team members will be trained in proper safety procedures. Team members must comply with all OSHA laws and health code regulations.
Team members will be trained in the proper use and care of assigned PPE. The hotel provides the required PPE. It is your responsibility to report defective, damaged or lost PPE, or equipment that does not fit properly, to your Manager.

SPECIFIC JOB KNOWLEDGE, SKILL AND ABILITY
The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation.
❑ Must have working knowledge of wines--both old and new world, decanting, confident experience with proper wine and Champagne service.
❑ Must have seasoned knowledge of preparation and service of alcoholic beverages.
❑ Must have basic knowledge of food preparation techniques, ingredients and proper food service standards and etiquette.
❑ Basic mathematical skills necessary for cash handling procedures and check calculations.
❑ Sufficient manual dexterity of hands in order to carry trays and plates, pick up glassware and bottles, scoop ice, and extend arms overhead to stock items.
❑ Full knowledge of the English language sufficient for the employee to understand inquiries from customers and communicate extensive instructions.
❑ Advanced communication skills to adequately listen to and speak to guests and fellow employees in a professional and respectful manner.
❑ Ability to comprehend written product labeling instructions to enable the safe application of products and processes within the facility.
❑ Ability to work in multiple areas including kitchen and preparation areas.
❑ Ability to grasp, bend, lift and/or carry, or otherwise, move or push goods on a hand cart/truck weighing a maximum of 100 lbs., at a continuous schedule.

QUALIFICATION STANDARDS
EDUCATION
High school graduate or equivalent preferred.
EXPERIENCE
Previous serving experience required. CMS Sommelier Level 1 or equivalent preferred.
Upscale dining experience preferred.
LICENSES OR CERTIFICATES
Arizona (Maricopa County) Food Handler Certificate of Completion.
Arizona Title 4 Certificate of Completion.
GROOMING
All team members must maintain a neat, clean and well-groomed appearance (specific standards available).

Meet minimum age requirements of jurisdiction
NOTICE:
The hospitality business functions seven days a week from morning to night. Schedules will vary and team members may be working from early morning or late into the night. All team members must be able and willing to work all holidays as needed. In addition, this is a hospitality business and a hospitable service atmosphere must be projected at all times.
Upon employment, all employees are required to fully comply with Wrigley Mansion rules and regulations for the safe and efficient operation of our facilities. Employees who violate our rules and regulations will be subject to disciplinary action, up to and including termination of employment.
