Rich had finished another busy semester at Pace University in New York City, and was looking forward to meeting up with old friends and enjoying the summer sun. In the back of his head he knew that his parents wouldn't fund his beach trips, vacation plans and parties. He also knew that he wanted to do something exciting that summer - something that would bring in some money but wouldn't be an ordinary 9-5. One night, while hanging with some friends at his dad's bagel store after hours, he started whipping up some creative eats. After a few bites of his amazing creations, a light bulb went off in his head - what if we open a late night fast-casual restaurant that delivers and which caters to friends looking to eat something interesting and to have a good time?! And from there, CARS was born. The summer of 2008 came and went. The "underground operation" (it ran out of Bagel Boys at nights) ended up being extremely successful, but unfortunately the boys had to go back to school. Rich's brother AJ, who was a recent law school graduate, was not totally enamored with practicing law. AJ had watched CARS from the fence that summer and knew that it was something special. He proposed that he and Rich continue the business that fall.
