Description
Proof of the Pudding is the proud food & beverage partner for the Clearwater Marine Aquarium’s Special Events. Clearwater Marine Aquarium (CMA) is not only home to a wide variety of aquatic life; it is also home to some of the most stylish and unique event spaces in Florida.
The General Manager is responsible for overseeing all aspects of the Clearwater Marine Aquarium’s Special Events Food & Beverage team. They will work closely with Culinary, Operations, and Sales to ensure all events are coordinated efficiently and effectively. This position will also work closely with the Client of CMA. The ideal candidate is professional in demeanor, seasoned in catering/premium logistics, and a leader in the F&B industry.
Responsibilities:
- Overseeing and effectively managing all day-to-day duties to ensure that each event is executed flawlessly from start to finish.
- Maintains safe, secure, and healthy environment by establishing, following, and enforcing sanitation standards and procedures; complying with legal regulations; securing revenues; and maintaining security systems.
- Managing and working very closely with account executive(s) or sales team to fully understand event details including custom menus, event set up, décor needs and event timeline.
- Responsible for maintenance and ordering of all décor, supplies, and equipment.
- Organizing frequent meetings and open lines of communication with sales, operations, and culinary team in preparation for each event.
- Meeting clients and doing property visits to ensure all their requests are understood and met.
- Solely responsible for scheduling to the needs of the business several months in advance and also for last minute “pop-up” events. Additionally, building relationships with staffing agencies and taking the lead on all hiring and recruiting efforts.
- Responsible for managing all staff including but not limited to: banquet servers, bartenders, stewards, captains, event coordinators, assistant operations manager, and sales account executive. This will include coaching, counseling and communication.
- Meets venue financial objectives by forecasting requirements; preparing an annual budget; scheduling expenditures; analyzing variances; initiating corrective actions.
- Responsible for all communication between Proof of the Pudding and the client. Serves as the first point of contact for all inquiries from the center. Responsible for nurturing this relationship.
- Creating, editing and updating pack lists and BEOs in preparation for the event.
- Responsible for all ordering and logistics.
- Managing the team that is scheduled to run each event. Leading the captains of each event and teaching them to also lead their staff.
- Attending and executing each event to ensure that it runs smoothly from the set-up to the break-down.
- Responsible for all post-event tasks including, inputting payroll and inventory.
- Enhances department and organization reputation by accepting ownership for accomplishing new and different requests; exploring opportunities to add value to job accomplishments
Performs other related duties as needed.
Qualifications
Required Qualifications
- Bachelor’s Degree in Hospitality, Management, or related field and/or 5 years of experience in Hospitality Operations, Food & Beverage/Banquets, Event Coordination, Operations Management, or equivalent
- Must have a history of maintaining professional relationships and the ability to communicate effectively with clients
- Must have a proven track record in quality management of employees and upscale events
- Must live near or be willing to relocate to Clearwater, FL

Work Environment
This position breakdown will be a variety of office work and event operations. Office work entails computer usage, interdepartmental meetings and communications via email, phone, and in person, and sorting and filing paperwork. Events may be in an indoor or outdoor setting with movement between temporary structures, buildings, and different terrains.
Physical Demands:
- Prolonged periods of sitting at a desk and working on a computer.
- This position may have periods of standing, moving through an event space, and traveling from venue to venue with bending, lifting, scooping, and carrying miscellaneous equipment and food items
- Ability to perform physical tasks; such as but not limited to, lifting approx. 25 lbs.
