What are the responsibilities and job description for the Head Butcher position at 1915 Farm?
1915 Farm - a regenerative, pasture based beef, pork and poultry farm is seeking a Head Butcher to come on board as we further vertically integrate the company with the opening of our in-house butcher shop, The Meatery by 1915 Farm.
The Head Butcher role will assist in the opening of the shop, tentatively scheduled for August 2023. The chosen candidate will help develop SSOP's and any applicable HACCP plans needed. The ideal candidate will have at least 3 years experience in whole animal butchery of beef and pork, able to identify cuts and consistently break down half pork and quarter beef carcasses into retail cuts, as well as provide knowledge of value-added processing including sausage making, curing, smoking and marinading.
