Description
JOB SUMMARY
The Cook prepares resident meals including special diets, according to physician orders and quality guidelines. This is a full-time, hourly position.
ESSENTIAL JOB FUNCTIONS:
- Preps and prepares food on a hot line; responsible for ensuring dishes are prepared consistently and served efficiently.
- Cooks, and serves general and special diet meals for residents.
- Measures and mixes food ingredients according to recipes and menus, preparing all types of food according to accepted food production methods and regulatory requirements.
- Practices proper portion control according to prescribed diet.
- Uses steam table to maintain meals at proper temperatures before they are served.
- Cleans cooking utensils, food preparation equipment, and kitchen areas according to schedules and prescribed methods.
- Makes appropriate notations of food exchanges on daily menus.
- Ensures all safety procedures are followed in the preparation of meals, including following prescribed meal diet orders for Maple Tree Village residents.
- Observes and practices all department safety and sanitation standards.
- Ensures resident satisfaction regarding meals through quality, quantity, and presentation.
Qualifications
QUALIFICATIONS:
- High school graduate or GED.
- Culinary background with a minimum of two years’ recent experience in restaurant, skilled nursing, and/or assisted/independent living.
- Strong prep, knife skills and line cook experience in a commercial kitchen environment including knowledge of breakfast, lunch, dinner, short-order and entree preparation.
- Knowledge and experience with scratch soups, sauces/gravies, starches and vegetables.
- Thorough knowledge of food safety is required.
- Food handler card must be obtained within 30 days of hire.
- Previous experience with temperature logs is a must.
- Must be able to follow recipes and be willing and able to follow Chef’s directions.
- Ability to work AM/PM shifts and some weekends.
- Knowledge & experience with varied styles of Asian cuisines is a plus!
