Dim Sum Chef Consultant-- PART REMOTE WORK; PART IN PERSON IN RICHMOND VIRGINIA

You will be creating the entire menu and flavor profile of a new modern Chinese dim sum restaurant including classic favorites and innovative new delights. Your job will be to create, document, educate and hold a new staff accountable for your creation. The position is remote during the menu creation phase and is in person during the leadup and opening of the restaurant. You will act as the liaison showcasing the cultural history and significance of dim sum with the staff. This is a 3-6 month consulting position and for the right candidate could be a fulltime position transitioning into the Executive Chef role if interested in relocating to the Richmond, VA, market. Opening scheduled for July/August of 2023.

The Job Description:

· Creates a delicious dim sum menu with classic favorites and innovative new delights for an American palate to be served in a modern dim sum restaurant serving dim sum daily and a rowdy dim sum brunch w/ push carts on weekends

· Creates delicious modern dishes for a menu with roughly 30 items including 70% to be dim sum as well as a few complimentary dishes like sides, salads, soups, desserts, medium and large plate items including brunch options for an American palate.

· Create standardized recipe cards with photos

· Create a training program for all boh positions

· Consult ownership on foh training material as related to the food and culture of dim sum

· Train the permeant Chef/Kitchen Manager and staff on cultural significance of dim sum, prep, execution, ergonomics of a Chinese kitchen, equipment maintenance and sanitation

· Include realistic food cost and labor projections under 28% in standardized recipe cards

· Source all ingredients and create an order guide with vendor ordering information and current pricing for KM

· Advise on the boh design including equipment purchases, layout and flow

· Advise on plating style, techniques and smallware to purchase

· Be available for in person tastings (at your location or ours) and get ownership approval of all items and menus

· Train and maintain local chefs, line cooks on high sanitation standards

· Be able to work with our kitchen design team on equipment needs and layout

· Be available in person for initial hiring and training (3-4 weeks) and first 30 days of public opening; 6 months following be available by zoom for ongoing consulting and updates to menu

Job Requirements:

· 2-5 years as a professional dim sum chef

· Understanding of dim sum and cultural significance

· Proven track record of recipe creation, costing and execution

· Great communication skills

· Heart of a teacher

· Menu development, menu engineering and menu pricing

· Prep list and order guide creation experience

· Organizational skills

· Self Starter

· Ability to spot and train great talent

· Worked with Anko dumpling makers before (not required but helpful)
