Position: Assistant Director of Food & Beverage Location: Pinnacle Bank Arena Department: Food & Beverage -Pinnacle Bank Arena and Pinewood Bowl Reports To: Director of Food & Beverage FLSA Status: FT Salaried, Exempt Summary ASM Global, the leader in privately managed public assembly facilities, has an excellent and immediate opening for an Assistant Director of Food & Beverage at Pinnacle Bank Arena and Pinewood Bowl. This position includes daily management of the Food and Beverage department, with a primary focus on Concessions Operations including oversight and management of warehouse operations, ordering, inventory, concessions operations, non-profit organizations, cash room, financials, budgeting, forecasting, and developing any reports required by the Food & Beverage Director, General Manager, or Finance Director. ESSENTIAL DUTIES AND RESPONSIBILITIES: Include the following. Other duties as assigned. Oversee recruiting, hiring, and training all Food & Beverage Concessions/Warehouse Managers and Supervisors. Serves as a direct report for the Concessions Managers and Supervisors as assigned. Will fulfill the role of Director of F&B when absent. Supports the Kitchen as well as the Catering/Premium Departments with Equipment Needs, POS, Purchasing and Inventory. Ensure proper hiring and training of all Food & Beverage Attendants, Cashiers, Bartenders, & Warehouse Personnel. Ensure planning, assigning, and directing work for employees, and non-profit groups is conducted in a timely manner. Ensures hands on supervision of concessions employees and non-profit employees by Concessions Managers. Attend weekly Food & Beverage meeting and Arena Operations meeting. Maintain POS Database and System and act as the Account Administrator. Oversee the process to maintain all Food & Beverage Equipment to include cleanliness, scheduled PMs, annual maintenance, and forecasted replacement equipment listed based upon depreciation and/or need. Bid out new Equipment. Maintains a comprehensive Food & Beverage Equipment Inventory including all small wares completed annually. Ensure proper compliance with local Health Department and SAVOR…Safe Beverage regulations are followed. Must maintain current Health Department certifications, Savor/ASM certifications and State certifications. Be creative regarding F&B selection, pricing, merchandising, and marketing. Attention to detail and consistency in every aspect of service is a must. The position is very hands on with considerable interaction with staff, clients, vendors and guests. Directs all purchases for Food & Beverage Department, including Alcohol. Works with Director of F&B to assist and conduct financial reporting, forecasting, and maintaining the SMOR report. Assists the Director of F&B in holding managers accountable regarding cash handling, increasing revenue, sales goals, inventory control, training, hiring, disciplinary action, budgets and payroll. Maintain access to all Part-Time F&B Payroll, Code Warehouse Staff and Verify all F&B Payroll. Ensure all PCI Compliance Training is up to date for all Part-Time Staff, Volunteers and Contractors. Maintain access to ASM Marketplace and conduct all purchases through this system. Process Invoices with the F&B Account Manager. Food & Beverage Inventory, ordering, receiving and controls. Assists the Director of F&B with menu selection and development in conjunction with the Executive Chef. Work with HR to ensure consistency in personnel management, and uphold the expectations set forth in the ASM business conduct policy. Maintain the highest standards of business ethics. Must be able and willing to work long shifts, weekends, evenings, early mornings, and holidays. Daily contact with all Departments, clients, and employees. Other duties as assigned. SUPERVISORY RESPONSIBILITIES: Carries out supervisory responsibilities in accordance with ASM’s policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding; disciplining employees in conjunction with Human Resources; addressing complaints and resolving problems. Directly responsible for the Supervision of the Concessions and Warehouse management team in conjunction with the Director of F&B QUALIFICATIONS: To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. Bachelor’s Degree in applicable field of study (experience in lieu of education acceptable – in addition to other experience requirements.) At least four years of management experience. Advanced oral and written communication skills. At least four years’ experience in Food & Beverage Operations. Knowledgeable in accounting aspects of Food & Beverage. Strong orientation to customer service and ability to work with other staff members in the facility. Results oriented individual with the ability to meet required budgetary goals. Excellent organizational, planning, communication, and interpersonal skills. Ability to undertake and complete multiple tasks. Computer skills to include Excel programs. Must know or be willing to learn Clover Sport and other F & B Software SERV Safe certified. Including SERV Safe Manager, Alcohol and Allergy. Ability to be creative with merchandising stands, bars and portables. Attention to detail and service oriented. Must provide training and support to all Food & Beverage Employees PHYSICAL DEMANDS Ability to stand & walk for long periods of time. Use hands to finger, handle, or feel and reach with hands and arms. Ability to regularly lift and /or move up to 50 pounds.
