The Lodge at Whitefish Lake, one of Montana's AAA Four Diamond resorts, is seeking a Pastry Lead to work with our Culinary Team.
PRINCIPAL RESPONSIBILITIES: The Pastry Lead will be responsible for preparing, planning, costing and executing all desserts for a la carte and banquet service as well as pastries and snacks for the coffee dock, spa, etc.
MAIN DUTIES AND RESPONSIBILITIES:

PRINCIPAL RESPONSIBILITIES: The Pastry Lead will be responsible for preparing, planning, costing and executing all desserts for a la carte and banquet service as well as pastries and snacks for the coffee dock, spa, etc.
MAIN DUTIES AND RESPONSIBILITIES:
- Check BEO's, Reservations Books, etc. to plan for the day.
- Check with Executive Chef to determine any special projects.
- Attend staff meetings and be a part of the planning and development of the strategy for the kitchen.
- Ensure par levels and prep are accurate for the Coffee Dock, Restaurant, and Banquets.
- Ensure quality, consistency, and execution in banquets.
- Ensure all equipment is kept in excellent working condition through personal inspection and by following the restaurant's preventative maintenance programs.
- Assis Sous Chef to ensure employees perform daily duties and tasks (checkouts, cleaning projects, etc. ).
- Fill in as Sous Chef/Manager on duty when needed.
- Fully understand and follow all regulations that pertain to health, safety, and labor requirements of the restaurant, employees, and guests.
- Plan, cost prep, execute any special events, i.e. Wine Dinners, Tap Takeovers, Mother's Day, Easter, etc.
- Assist in seasonal menu changes.
- Plan, cost, prep, execute new dessert menu on a seasonal basis.
- Knowledge of Food and Beverage, local and state food handling laws and procedures.
- Must be organized and detailed oriented.
- Must be a team player.
- Must be a strong leader with a hospitality mindset.

- Ability to calculate cost.
- Must be alert and quick reasoning. Should be able to make management decisions for the best interest of the hotel. Ability to interpret instructions and guidelines set by the hotels' policy and procedures.
- 4 Year degree in hospitality, hotel & restaurant management, culinary school or related field preferred.
- Minimum of 2 years experience in management or supervisory position in a restaurant or related field an asset.
