Job Summary:
- Responsible for assisting the F&B management team with supervision and production of kitchen operations for multiple F&B outlets including a Casual Dining Restaurant, Fine Dining Restaurant, three (3) concept Food Court area, Banquets & Catering.
- Responsible for food production, personnel scheduling, training, food and labor costs, and sanitation.
- Assists with menu development and implementation as well as ordering (requisition) and inventory for the department.
Essential Functions:
- Responsible for food production, scheduling, food & labor costs, sanitation controls, and the management of all culinary staff
- Enforce all departmental, property and company policies and procedures. Ensure compliance with safety and quality standards as well as health department regulations. Ensures culinary prep areas/kitchens and all kitchen equipment are/is in good working order and corrects deficiencies.
- Training and development of culinary staff
- Menu development and implementation as well as ordering (requisition) and inventory for the department. Ensures compliance with Corporate specifications.
- All other duties as assigned.
Qualifications:
- Associate’s Degree (ACF Certification Level to CFC designation at a minimum) (Area of Study: Culinary Arts Degree, Certificate, or Apprenticeship)
- Five years of culinary arts experience, including previous experience in a management role; preferably within a high volume restaurant and catering operations environment; experience supervising both management and line-level personnel
- Knowledge and experience monitoring food & labor cost, menu development and costing. Experience with ordering and inventory procedures and systems.
- ServSafe Certification (required). Culinary certification as a CSC or CCC preferred
- Jointly responsible for Food Cost-Of-Sales, BOH Payroll and Controllable Expenses.
- Excellent organizational and multi-tasking skills
- Excellent communication, leadership skills, and guest service skills
- Excellent knowledge of culinary production practices (cooking techniques, knife skills, etc.) and food safety & sanitation guidelines
- Intermediate math skills including addition, subtraction, multiplication, division, fractions and percentages
- Basic computer skills including word processing, spreadsheets, e-mail, and internet
- Verbal and written communication
- Hearing of conversation level
- Both hands and legs required
- Operates powered equipment
- Vision: near and color
Physical Requirements:
- Standing and walking 100% of the time in a fast paced and busy environment
- Ability to lift up to 50lbs frequently and work in extreme temperature conditions (both hot and cold).
- Ability to follow and write bulk recipes for production and service
Environmental Working Conditions:
- Exposure to 90 degree climate 95% of the time
- Exposure to 38- degree climate for special events, working in a walk-in coolers for long periods of time
- The work environment contains bright lights, loud noise, and stressful situations.
