Rate of pay: $18.00 per hour

Position summary: The assistant food service manager directly supervises the production supervisor, line supervisors, correctional officer staff and offenders assigned to the dining room. She/he is responsible for the management of food services, which includes the offender dining hall and special food services in compliance with Management & Training Corporation (MTC) and Texas Department of Criminal Justice (TDCJ) directives.

Essential responsibilities:

• Maintains kitchen equipment in orderly workable condition. Ensure work area is safe, clean, and sanitary.
• Ensure count and control of all kitchen tools. Provide an accurate count of all control items at the beginning and end of each shift.
• Supervise offenders in preparation of meals required.
• Mop, scrub, refinish and spot clean kitchen floors.
• Clean, sanitize, and deodorize rest rooms.
• Ensure counts are preformed accurately for all offenders assigned to the kitchen.
• Maintain accountability of offenders and property; Adhere to safety practices.
• Promote the development of positive social skills through modeling appropriate behaviors and intervening when inappropriate behaviors are observed; provide regular feedback to staff regarding social skills procedures and intervention techniques.

Education and experience requirements:

• Graduation from an accredited senior high school or equivalent or GED.
• One year full-time, wage-earning experience in correctional, commercial, or institutional food preparation or food service management experience ---OR--- Eighteen months of correctional custody law enforcement experience.
• A valid driver’s license in the state of Texas with an acceptable driving record is required, unless waived by management.
