Job Overview:
The Pastry Sous Chef will work closely with the Executive Chef and Executive Pastry Chef to oversee the pastry kitchen operations, ensuring the highest standards of pastry production, creativity and quality results are maintained. The ideal candidate will possess a deep understanding of pastry techniques, a flair for the creative, and strong leadership skills to inspire and mentor the BOH team. As a hands-on member of the Management team, this person will ensure all aspects of the restaurant are running smoothly and efficiently to deliver genuine hospitality.

Duties:
- Collaborate with the Executive Pastry Chef to develop and execute innovative dessert menus and pastry offerings that complement the restaurant’s culinary vision and standards
- Supervise and mentor all Back of House employees to ensure consistency, quality, and adherence to recipes and techniques
- Assist in the recruitment, training, and development of pastry personnel, fostering a positive and collaborative work environment
- Oversee pastry production, including baking, decorating, and plating, to ensure that the products are prepared to specifications and presented appropriately
- Manage inventory levels, order supplies, and control costs to meet budgetary goals while minimizing waste and maintaining quality
- Maintain a clean and organized pastry kitchen environment, adhering to food safety and sanitation standards at all times
- Actively participate in daily pastry operations, including production, preparation, and plating during service
- Collaborate with the culinary team to ensure seamless coordination between savory and sweet offerings, as well as accommodate special requests and dietary restrictions
- Contribute to the development and implementation of standard operating procedures (SOPs) to enhance efficiency and consistency in pastry production
- Stay abreast of current pastry trends, techniques, and ingredients to continually innovate and elevate the restaurant’s pastry offerings
Skills:
- Proven experience as a Pastry Sous Chef or senior pastry position in a high-end, fine-dining restaurant
- Culinary degree or equivalent certification from a recognized culinary institution, with a focus on pastry arts preferred
- Proficiency in pastry techniques, including baking, decorating, and plating, as well as a solid understanding of flavor combinations and pastry fundamentals
- Knowledge of food safety and sanitation regulations, with a commitment to maintaining a clean and hygienic pastry kitchen environment
- Exceptional pastry skills with a keen eye for detail, creativity, and precision in dessert preparation and presentation
- Flexibility to work evenings, weekends, and holidays as required
