The Director of Culinary and Restaurant Operations takes ownership of the food & beverage operations at the resort, both in the heart of the house and in the front of the house. This role will be responsible for managing the day-to-day operations of the hotel’s culinary operations and provide support and direction as needed in our restaurant & bar (Fleetwood), as well as hotel banquet events, market and other Food & Beverage activations on property. This role is an integral part of the overall Hotel Leadership team.

Responsibilities Include but are not limited to:

  • Supporting and managing the culinary operations in Fleetwood along with other hotel departments
  • Responsible for the short and long-term planning of the restaurant, including menu development, recipe development and standardization, costing, and representing Fleetwood at local community events
  • Ensure effective hiring, training, development, and promotion of the team
  • Lead and coach the team towards achieving exceptional guest services and colleague satisfaction result
    • Develop and implement creative strategies for revenue enhancement and cost containment
    • Develop and recommend the budget, marketing plans, and objectives. Manage within those approved plans
    • Responsible for maintaining a positive, professional, and cohesive appearance throughout the restaurant in line with branding
  • Plan, coordinate & manage special events, such as holiday functions
  • Ability to take the initiative to run the outlets as a free-standing entity
  • Scheduling and payroll
  • Product purchasing, invoice processing, & expense control
  • Monitor restaurant and banquet operations throughout service to ensure excellent restaurant operations are consistently achieved.

  • Maintain Linen inventory based off of business demand

  • Flatware, china, and kitchen inventory and ordering
  • Develop programming initiatives for Fleetwood seasonally.
  • Represent Fleetwood at local events to showcase the restaurant and build partnerships
  • Uphold a safe working environment while being healthy and safety conscious.

Compensation Range: $75,000-98,000 / annually

Qualifications

  • A true desire to satisfy the needs of others in a fast-paced environment
  • 3 years of Previous Experience in Culinary Leadership preferred
  • Previous experience as a leader of a team required
  • Must be proficient in general computer knowledge and Point of Sales (POS) Systems.
  • Bilingual (English & Spanish) is a plus
  • Ability to lift, pull, and push a moderate weight
  • Ability to stand for long periods of time
  • Must be able to work a flexible schedule, including nights, weekends, and holidays
