What are the responsibilities and job description for the Executive Chef position at Card Sound Golf Club?
Card Sound Golf Club is a private golf club located within the Ocean Reef Club in Key Largo, Florida. Our unique “Club within a Club” has a small membership of approximately 250 members.
Celebrating 50 years in 2023, Card Sound Golf Club was founded by Ocean Reef Club members seeking a more private golf experience.
Card Sound Golf Club is dedicated to providing a premier, family-oriented, private golf club experience through operating and maintaining a signature golf course with convenient access while presenting an accessibly elegant clubhouse where elevated cuisine is graciously served with genuine hospitality.
Dining operations include Brunch/Lunch and Dinner in a refined space as well as an additional venue serving lunch and dinner in an outdoor, casual setting.
Culinary Skills
- A visionary and trendsetter, yet deeply understands and respects the Club’s long-standing culinary traditions.
- Extensive Culinary management experience with commitment to providing elevated cuisine and commitment to training and growth of culinary staff.
- Experience in both Banquet and A La Carte food production
- Proven experience in developing creative menus for both regular food service as well as for members’ special occasions.
- Commitment to resourceful and artistic food presentation.
- Overall responsibility for all A La Carte meals served, club sponsored functions and private member events.
- Maintain a safe and sanitary workplace.
- Prepare standardized menus, costings and presentation SOP’s.
Qualifications
- Minimum of eight years in culinary management preferably in a similarly sized or larger club.
- Ability to supervise a large staff and accomplish goals on a timely basis.
- Ability to safely operate complex food preparation machinery.
- Strong knowledge of the following:
English language.
Microsoft Word & Excel.
Five-star customer services.
Casual, Fine Dining, and Banquet Buffet and Plated Services.
- Ability to physically self-demonstrate culinary techniques, (knife skills, basic cooking principles, plate presentation, safety & sanitation practices).
- Ability to work in confined spaces.
- Basic mathematical skills necessary to understand recipes, measurements, requisition amounts & portion sizes.
- Strong teaching ability required.
- Must be able to convey information and ideas clearly, evaluate and select among alternative courses of action quickly and accurately.
- Must work well in stressful, high-pressure situations and maintain composure and objectivity under pressure.
Qualified Candidates will need to travel to Key Largo to participate in face-to-face interviews a tasting showcasing skills.
