POSITION SUMMARY
At Commerce Casino, job expectations for Kitchen
Managers are to oversee kitchen staff and supervise food production to ensure
the highest quality and efficiency.
PRIMARY JOB FUNCTIONS
Function
as the representative chiefly responsible for the day-to-day supervision
of all employees who work in the back of the house in coordination with
the Front-of-House Managers.
Plan
the work of all back of the house employees, assign work, prioritize work
of personnel, and make changes to assignments and priorities based on an
independent assessment of the restaurant’s needs.
Responsible
for the leadership, evaluation, training, hiring, and scheduling of all
personnel in assigned area. This will be accomplished through effective
leadership of direct report of Supervisors as well as hands on interaction
and training of line employees.
Assist
in interviewing and hiring BOH staff based on the F&B’s assessment of
staffing needs.
Assist
in meeting or exceeding fiscal goals in terms of cost of goods, cost of
labor and operating costs.
Direct
subordinates in the receipt, inventorying, stocking, organizing, and
proper storage of food products.
Ensure
cleanliness and organization of all BOH and waste areas through the
creation and implementation of daily checklists and service audits.
Ensure
accurate and timely documentation of attendance variance reports, customer
issues, and shift reports.
Provide
input to the menu creation process in conjunction with Food and Beverage
Management.
Assure
all Commerce Casino Policies, Procedures, and Standards are being followed
at all times.
Actively
participate in departmental and company training programs as required.
Perform
additional tasks as directed by Management.

QUALIFICATIONS
Work Experience Required: Minimum of five (5) years full-service restaurant/bar
experience in high volume establishments
Education: College Degree from an accredited
University
Knowledge Required:
Strong professional
leadership skills are essential
Individual must possess
exceptional written and oral business communication skills
Advanced experience in the
operation of Micros or other POS systems, as well as the ability to
generate and effectively and accurately analyze reports from these systems
is required
Other Requirements:
Ability to provide summary reports and financial summaries
and updates to management
SCHEDULED HOURS
Commerce Casino operates 24 hours, 7 days a week. Schedules may vary depending on business needs.
