What are the responsibilities and job description for the Pit Boss/ Pit Master position at Davis BBQ?

The primary responsibility of The Pit boss is the overall BBQ and food prep of the restaurant.
You will manage the food production of all our smoked meats and sides, using proper production forecasting, product handling and cooking techniques.
The Pit Boss also ensures that the Barbecue standards are upheld, and the food looks awesome!
As our Pit Boss, you will ensure that every meal we serve meets our extremely high standards. Every day, you will check our meat supply for any products that don’t meet our standards.
You lead and assist the team with prepping and smoking the meat, aiming to only make enough for the daily demands while minimizing waste.
Experience is a plus, but we will train. Must have very reliable transportation and a strong work ethic.
Position Duties / Essential Job Functions:
1. Understands the company menu and business philosophy.
2. Responsible for all daily food preparation and daily smoking in the kitchen; cooks and smokes food and leads the kitchen staff team.
3. Follows the designated guidelines for food preparation, and food line preparation and procedures outlined by the Management team.
4. Follow all designated recipes as outlined..
5. Knowledgeable on food pars needed for the day and the week.
6. Understands all on-hand items and prepares accordingly to ensure all levels are maintained properly.
7. Responsible for the storage of all food and supplies. Insure proper rotation and the storage placement of the following areas: (dry storage, refrigeration storage, freezer storage, back-room storage, and the smoker area).
8. Participates with the management staff on menu planning and food specials.
9. Assists with the training of the kitchen staff related to proper food preparation , company standards on quality and consistency as well as kitchen safety and health standards.
10. Leads the team to make sure the food looks good and is cooked properly, the portions are correct, and it is cooked and served quickly by friendly and courteous staff.
