Summary:
The FOH Prep Attendant’s primary responsibility is to assist the Food Service Team in executing food service contracts. The FOH Prep Attendant will be responsible for food preparation and maintaining a clean facility. Assisting or leading service in the DFAC will be expected depending on staffing levels and needs.
Essential Functions:
- May assist in any or all of the following: measuring and mixing ingredients as directed, assists in preparing, cooking and decorating breads, rolls, pastries, cakes and other bakery items
- Perform a versatile cooking skillset (frying, roasting, grilling, sautéing, braising, baking, steaming, etc.)
- Capable of preparing a variety of food genres (Italian, Mexican, Chinese, American, Southern, etc.)
- Preform preparation and cooking for high volume food service
- Receive, unload trucks, and store stock
- Take special orders or dietary requests from customers
- Perform basic math for portioning and food waste management
- Assist in performance of Hazardous Analysis and Critical Control Points (HACCP) program
- Communicate well with DFAC Manager to ensure proper quantity and quality of meals are ready at service time.
- Perform safe and proficient knife skills
- Perform equipment sanitation and maintenance where applicable
- Maintain high sanitary, hygienic, and safety standards and conditions
- Follow recipes and standard operating procedures in food preparation
- Perform proper labeling and storage of PHFs (potentially hazardous food)
- Serve breakfast, lunch, dinner and other food to customers in a courteous customer service-oriented manner
- Organize and set up workstations, equipment and serving lines
- Perform all duties assigned by the DFAC Manager
- Other duties as assigned
Knowledge and Skills:
- Thorough understanding of quality customer food service and preparation of a variety of nutritional meals from different cultural backgrounds
- Knowledgeable in food inventory control
- Knowledgeable in HACCP, TB MED-530, FDA and U.S Department of Health and Human Services Food Code standards
- Excellent communication skills
- Ability to work flexible hours. We operate 24/7/365
Education and Experience:
- High School diploma (or equivalent) is required
- 2 years’ experience in large scale government dining facility (or similar) operations, or in the restaurant industry, required
- Possess or be willing to acquire ServSafe Food Handler’s Certificate or equivalent federally recognized health and sanitation program
- Possess or be willing to acquire ServSafe Food Allergen Certification at the company’s expense
- Must be authorized to work in the U.S.
- Must be able to travel within the Continental United States (CONUS).
- Must pass a pre-employment drug screen, motor vehicle record check and a criminal background check.
Physical Demands
The employee may be required to stand, walk, twist, turn, bend, climb, lift, or kneel. Occasional lifting to 75Ibs may occur.
