The Test Kitchen Support Chef is responsible for maintaining and operating the IHOP test kitchen and ensuring it represents a working IHOP kitchen. This role also assists the Culinary Implementation Chef in supporting the implementation and operationalization of all new menu items created by the Chef Innovation team while supporting the integrity of the core menu and values of IHOP operations. This role also provides culinary support to other functional areas such as Marketing, Strategic Operations, QA, Training, and CSCS. The Test Kitchen Support Chef reports to the Culinary Implementation Chef .

ESSENTIAL TEST KITCHEN DUTIES

• Maintain the cleanliness and organization of the test kitchen, coolers and freezers, and all equipment and small wares. The kitchen must be kept white glove clean.

• Maintain inventory of IHOP food products and small wares in the test kitchen.

• Place weekly food orders for all core menu ingredients, in addition to purchasing produce and other groceries not supplied by DC, from the local grocery store.

• Receive, unpack, record, and properly label incoming vendor samples.

• Organize and maintain sample versions and retains during item development process.

• Pack and ship outgoing packages.

• Maintain and organize daily tasks, including but not limited to:

  • Maintain and organize cold and dry food storage areas, including the disposal of expired items

  • Removal and disposal of food waste and garbage

  • Dishwashing and maintenance of all cookware and small wares

  • Set up and break down of cooking stations including proper product rotation and properly maintaining station cleanliness

• Maintain overall cleanliness and order of the kitchen

ESSENTIAL CULINARY SUPPORT DUTIES

• Support Culinary Implementation Chef by facilitating and assisting with food show planning, preparation, set up, execution, and break-down

• Support Culinary Implementation Chef with coordinating with Innovation Chefs, CSCS, and Vendors on sample tracking and status.

• Support Culinary Implementation Chef in maintaining culinary versions of Core Food & Beverage Menu recipes, specifications, photographs, and other materials as they are handed off from the innovation chefs

• Perform Operational validations, yields, shelf life studies, portioning, station set up, etc. for all new items under the direction of the implementation and innovation chefs.

• Provide culinary support for all cross-functional teams as needed.

• Partner with Supply Chain to ensure timelines and delivery of new inventory for Tests and National roll-outs.

• Collaborate with Training on the development and implementation of new food & beverage training tools and aids to support new items and initiatives.

• Provide culinary support to Training during their preparation of food & beverage training materials as needed.

• Provide subject matter expertise for all culinary related questions from other functional areas. Provide recommendations and solutions to address questions and establish solutions to identified concerns.

• Starting salary: $80,000
