Summary Description

Dog Tag Bakery is looking for a creative, forward thinking and resourceful leader to serve as Head Pastry Chef for the Bakery. As an essential leader in the bakery and member of the Dog Tag Team, the Head Pastry Chef must be a leader of quality and creativity in the kitchen and motivated to help Dog Tag Bakery reach their goals and fulfill our mission. The ideal candidate combines their passion and enthusiasm for baking & pastry with a high level of technical & interpersonal skills, including experience and knowledge

Key Responsibilities & Duties

  • Lead culinary operations, and supervise BOH kitchen team. Lead the production of a wide range of pastries, desserts, breads and other baked goods.
  • Develop, execute and create innovative pastry ideas. Including menu development, recipes that align with Dog Tag's brand and vision.
  • Ensure the highest standards of food and pastry quality, taste and presentation are consistently met.
  • Manage inventory and order supplies to maintain adequate inventory levels while minimizing waste and overall cost.
  • Collaborate with BOH kitchen staff, to implement systems, process and routines to ensure smooth and consistent operations on a daily basis.
  • Train and mentor BOH kitchen staff, ensure consistent development, fostering a positive, respectful and collaborative work environment that is in line with DTI core values.
  • Maintain exceptional levels of cleanliness throughout the bakery and ensure compliance of Health and Safety standards, including CDC COVID-19 Guidelines.
  • Collaborate with the Bakery General Manager to oversee the scheduling, hiring, discipline and coaching opportunities for all BOH team members.
  • Lead regular product training sessions and/or FOH shift meetings in coordination with Director of Bakery Operations and General Manager.
  • Collaborate with the Bakery leadership team to manage the execution of special requests and projects, menu development, new item roll out and bakery marketing.
  • Support the development and execution of learning opportunities for the rotation content for Dog Tag Bakery’s Fellowship Program.
  • Lead planning and execution of BOH shift meetings and schedule 1:1 meeting with BOH kitchen team members.
  • Collaborate with the Bakery leadership team to help lead weekly Operations meetings.
  • Ensure adherence to Dog Tag's Nut Free Certification standards.
  • Promote Dog Tag Bakery at Industry events and for internal marketing strategies.

Qualifications

  • Associate Degree in Culinary Arts or equivalent experience.
  • Proven experience as a Head Pastry Chef or in a similar position.
  • Strong leadership, team building and management skills.
  • ServSafe Food Manager Certificate.
  • 3 years of management experience.
  • 6 years or industry experience.
  • Strong organizational, communication and interpersonal skills.
  • Ability to work effectively in a fast paced environment with good attention to detail.
  • Clear understanding and enthusiasm for Dog Tag Inc. mission.
  • Availability to work flexible hours, including weekends.

Key Performance Indicators

  • Alignment with strategic organizational Goals: Continuing to evaluate department activities to ensure they are aligned with the Organization’s overall mission.
  • Ability to demonstrate Dog Tag's core values on a daily basis inside and outside of the bakery.
  • Develop training and development programs for new hires and existing BOH team members to ensure consistent growth and development.
  • Develop seasonal menu offerings and products to in conjunction with the General Manager increase sales.
  • Maintain ingredient, labor and supply cost associate with fiscal year budget.

Job Type: Full-time

Pay: $65,000.00 - $68,000.00 per year
