Nature of Responsibilities:

Serves as the nutritional expert for Duke Dining, developing educational and culinary programs for students and staff; Provides support and guidance for students with special dietary needs and food allergies; Resource administrator for the CBORD food management platform supporting the Food Systems CBORD Manager; Liaison between Duke Dining and Duke Wellness Center/Duke Student Health, ensuring adequate nutritional support for the Duke community;

 

Supervision of student interns or staff working for Nutrition Services is required. Other duties may include occasional teaching to university professionals and undergraduates in a formal or informal setting. Strong software skills for food analysis, and website/ social networking mediums is required. Collaborate with health and wellness professionals (internally and community based) to provide care as needed; Support healthy lifestyle choices and health maintenance throughout the campus community by creating and implementing campus-wide nutrition initiatives while collaborating with other university departments.

 

Specific Duties                                                                     % of Effort

  1. Serve as the primary nutrition expert for Duke Dining; Address  specific dietary needs of students with food allergies and other special dietary needs; Work with DUSDAC (Duke university Student Dining Advisory Committee); Design, implement and promote nutrition messaging campaigns. Work with Duke Dining vendors to provide nutrition information and education; Serve as a FARECheck Training Instructor for Duke Dining locations; Other projects as assigned.

Design, plan, discuss and implement recommendations to meet nutritional needs of students with dietary concerns; Modified diets may include but are not limited to: plans for those with allergies, disordered eating, diabetes, GI concerns hypertension, abnormal blood lipids, and weight management; Evaluate effectiveness of nutritional recommendations and modify or revise as needed.

  1. Benchmarking nutritional content across all Duke Dining locations; Make appropriate recommendations for Duke Dining locations keeping the student’s health and wellbeing forefront; Collaborate with Student Wellness surrounding on-going initiatives and events.

  1. CBORD nutrition support to review menus, recipes, ingredients and allergens; Serve as a CBORD back up when needed.

  1. Manage student intern projects and supervise work performance;

Required Minimum Qualifications

Work requires bachelor’s degree in dietetic/nutrition and American Dietetics Association (ADA) registry. No experience required beyond education/training.  Or an equivalent combination of relevant education and/or experience.

 

Preferred Qualifications

Registered Dietitian with a minimum of 5 years of experience or a graduate degree in Nutrition or Public Health with a minimum of 2 years experience.

  • In-depth knowledge of different dietary allergies and restrictions
  • An understanding of food science and how it affects bodies
  • Ability to work effectively as a team member while also being able to work independently
  • Strong listening and communication skills, attention to detail, and ability to be flexible
