ABOUT THE JOB
We are adding a Tunnel Oven Operator to our daytime baking team. This person is responsible for the proofing and baking of all breads to exact company standards. The quality and appearance of each finished product is dependent upon the Tunnel Oven Operator. If you have commercial baking experience but have never operated a tunnel oven -- apply anyway. We pride ourselves on being able to cross-train on our three ovens (tunnel oven, rack oven, horizontal oven).
Pay: $17.00 an hour overtime
Workdays: Sunday through Friday, 7 a.m. to 5 p.m.

ESSENTIAL FUNCTIONS AND JOB DUTIES
- Responsible for making sure the work area is prepared. This includes, but is not limited to:
- Organizing oven racks
- Looking over the schedules for the day’s production demands
- Rounding up all the cleaning utensils that will be needed
- Responsible for setting correct preset temperatures per the oven chart
- Responsible for monitoring the proof boxes and products coming out of the proof boxes. This includes, but is not limited to:
- Pulling bread at specified heights
- Monitoring proof box temperature/humidity
- Monitoring proof times and reporting discrepancies/concerns to the shift Supervisor and/or Production Manager
- Responsible for reading, understanding and adhering to the standardized information on the oven charts.
- Responsible for following the oven and proofing charts and taking the final temperature
- Responsible for loading ovens with the appropriate product, monitoring bake times and temperatures
- Responsible for ensuring that the bread looks right. Size and coloration issues must be reported to the shift Supervisor and/or Production Manager immediately.
- Responsible for sweeping the oven area to ensure a clean and safe working environment
- Responsible for documenting all the required information on the oven sheets
- Responsible for equipment sanitation during down time
- Must be available to participate in cross departmental training in all four production departments
- Responsible for reporting food safety and quality issues

PREFERRED SKILLS
- High school diploma
- Minimum two years’ experience in a bakery environment
WORKING CONDITIONS/PHYSICAL FACTORS
- Workers are exposed to temperatures above 90 degrees for periods of more than one (1) hour during summer months.
- Workers are exposed to hazards in the workplace such as close proximity to equipment conducting extreme heat, and moving parts.
- Worker required to push and/or pull 350 lbs. (fully loaded oven bread rack).
- Worker required to work continuously in a hot humid environment
- Must be able to maintain a quick and steady pace when moving baking racks in and out of ovens
- Must be able to keep a positive attitude and high level of motivation to ensure the highest quality of bread all the time
- Must be flexible and willing to work any shift, time, day or holiday

Engelman’s Bakery was founded in 1983 by Sammy Engelman and his sister, Miriam Engelman Gur-Lavi. Sammy and Mirian have more than 200 years of bakery business in their blood. Their parents ran a bakery in their native Germany before immigrating to New York in 1961. Sammy moved to Atlanta in 1981 and in 1983 opened a full-line retail bakery. The operation gradually evolved into a full-time wholesale business. Sammy and Miriam constructed a state-of-the-art baking production facility in Norcross, Ga., that is AIB International and ASI Food Safety certified, and in 1997 we relocated to Norcross, where we make and distribute all the bread our customers desire.
