Benefits Offered:

  • Fabio Trabocchi Restaurants offers full-time employees company subsidized health insurance.  A full-time employee must work on average 30 hours per week to qualify for health insurance benefits.  Coverage begins on the first of the month after the 60th day of employment.  The insurance enrollment period is between 30 and 90 days of employment.

Esssential Duties and Responsibilities: 

  • Functions as an integral part of the pastry team.  
  • Responsible for cost-effective management of all aspects relating to desserts, pastries and bread. 
  • Monitors and maintains cleanliness, sanitation and organization of assigned work areas.  
  • Ensures products received are up to company standards.  
  • Supports production and execution of private events as needed 
  • Maintains and updates standard recipes 
  • Conducts and supports on-site and in-service training for pastry staff on company standard recipes, processes and procedures to ensure consistency 
  • Monitors waste and loss of food product 
  • Ensure all opening and closing duties are consistently completed.  
  • Minimizes waste and maintains controls to attain forecasted food and labor costs on a weekly basis.  
  • Maintains health department, food quality and company standards 
  • Assists team members with their daily duties whenever possible.  
  • Creates and maintains a healthy and productive work environment. 
  • Actively participates in all company training programs and consistently meets training expectations. 
  • Performs other tasks or projects as assigned.  

The Ideal Candidate Will Possess

  • At least 5 years’ progressively more responsible roles in kitchens of fine dining or upscale casual restaurant kitchens. 
  • An appetite for providing memorable cuisine and hospitality.  
  • Curious intelligence to continue learning in the position. 
  • Open availability and a professional culinary career mentality.  
  • Excellent emotional self-awareness under pressure.

Our menu features wonderful crudo, seafood towers, and daily selections of whole fish and the most pristine seafood from around the world. Offering scenic views from the Georgetown waterfront, Fiola Mare also offers beautifully crafted cocktails and a superb cellar recognized by Wine Spectator with a Best Award of Excellence.
