Meat Cutter Team Member Mission
A Meat Cutter is responsible for ensuring satisfaction and maintaining quality service. A Meat Cutter cuts, trims, and prepares various consumer sized meat portions.
Responsibilities
- Creates and follows par levels for ordering process
- Derives meat order for Culinary Operations Director/ Purchase Team
- Is aware and follow hierarch of meat storage
- Follows ingredient report to report to ensure enough product is produced for cook up
- Mixes spices to produce various blends and dry rubs & seasoning for meats
- Understands weight variance of raw & cooked product
- Ensures all meat cuts are to spec’d weights
- Cuts and trims all meats
- Seasons all cuts of meat in accordance with recipe guide
- Preparation of meat products may include using equipment, such as grinders, power jacks, scales, wrapping machines, saws and knives.
- Inspects utensils for cleanliness & working condition before use: Cutting boards clean; no heavy gashes/deep grooves, grey bins free of any encrusted residue to restrict cross contamination
- Place knives in designated site when not in use avoiding mishaps with ill properly placed sharp objects
- Properly labels and dates any product out of original package
- Places rack covers on any rack one is using for food storage and walk-in/meat cooler
- Sanitizes equipment & prep surfaces after prepping each menu item to ensure proper sterilization and restrict cross contamination
- Maintain safety and sanitation standards according to the center’s specifications and to stay in compliance with federal, state and local regulations in those same areas.

Requirements
- 3 to 4 years of previous experience
- Ability to pass drug test
- Experience in inventorying and ordering practice
- Breakdown meats from primal, sub-primal to finish cuts
- Possess Manager level Safe Serve or has ability to pass Manager level Safe Serve test
- U.S. citizen or right to work in U.S.
- Must be at least 18 years old
- Be able to work weekends, holidays, and extended periods of time
- Ability to read, understand and carry out task per plate guide
- Ability to take, understand and use constructive criticism to produce the best you and the best product
- Ability to bend, stop, kneel, and twist
- Ability to sit, stand and do repetitive work for long periods of time
- Ability to read, write, identify, and verify numbers
- Ability to interpret, understand and follow instructions
- Ability to pass a background check

- Physical Requirements: Standing, walking, lifting (40-50 lbs.), carrying, pushing/pulling, stopping, kneeling, crouching, reaching, handling, talking, hearing, tasting/smelling, works mainly in meat cooler (temp below 40*F).
Minimum Base Pay
Pay is based on experience.

Work Environment
Temperatures could range from 36 degrees to 85 degrees Fahrenheit.
